Answers: What to do with leftovers? I have the basics--turkey (white and dark), a little stuffing, green beans, corn, cranberry relish, dinner rolls, mashed potatoes, gravy, etc. I'm looking for a tried and true recipe. Maybe a casserole of some type? I want something different than just openfaced turkey sandwiches. :)
Cut up some turkey, mix with corn, and gravy. Pour into the bottom of a casserole dish. Put a small layer of green beans over this. Then, a nice thick layer of mashed potatoes.
Bake in the oven.
Thanksgiving Shepherd's Pie!

Turkey and Chip Bake
2 cups of cubed turkey
2 cups of chopped celery
1 small onions diced small
1/2 cup of shredded cheese
1 tablespoon lemon juices
1 cup (8 oz.) Miracle Whip
1 tsp. salt
1/4 tsp. black pepper
French's French Fried Onion Rings or crushed potato chips
Preheat oven to 400 degrees F.
Mix all the ingredients except Onion Rings and put into a buttered casserole dish. Top the mixture with the onion rings and bake for 20-30 minutes or until mixture is hot and bubbly.
Serve with a green salad.

Make mini-turkey sandwiches with dressing and cranberries on your rolls. Warm up the peas and corn. Make mashed potato pancakes and top them with gravy.
CRISP POTATO PANCAKES
1 egg
2 c. leftover mashed potatoes
1 tbsp. butter
1 tbsp. seasoned salt
Beat egg slightly. Stir potatoes and egg together. Melt butter in heavy skillet until hot, but not smoking. For each pancake, drop tablespoon of batter into hot skillet. Sprinkle with seasoning. Turn when brown and firm. Serves 4.
