Would you like to share a turkey "left-over" recipe that isn't soup, or a sandwich?!

Question: I have one for you! Thanks. Happy Shopping Day!

Turkey Tetrazzini

1/2 cup butter
2 cups fresh sliced mushrooms
2 Tbsp. flour
2 cups chicken broth
3/4 cup Half and Half
Salt and pepper to taste
3 Tbsp. dry sherry
2 Tbsp. chopped fresh parsley
3 cups cooked turkey, cut into bit sized pieces
7 oz. cooked spaghetti
1 cup grated Parmesan cheese

Melt butter in large pan and cook mushrooms until just tender. Add flour and, while stirring slowly, stir in chicken broth. Cook over medium heat while stirring until mixture starts to thicken. Remove from heat and add Half and Half, sherry, parsley and salt and pepper to taste. Add turkey and cooked spaghetti and mix well. Pour mixture into an ungreased 13 x 9 inch baking dish and sprinkle with grated Parmesan cheese. Bake in preheated 350 degree oven for 35 to 40 minutes.

The Skinny: Use low fat chicken broth and substitute low fat evaporated milk for the Half and Half.

Turkey Curry? In the UK you can get a really nice Thai Yellow Curry Sauce (Loyd Grossman). If you mix some organic crunchy peanut butter into it and heat up with the cooked turkey, then serve with Thai Rice, it's *delicious*.

I don't have it handy right now, but we made a turkey pot pie. It was just one pastry crust on the bottom of the pie plate. Then I heated up cream of mushroom soup with a little milk, added frozen mixed veggies, garlic powder and white pepper, and a few handfuls of diced turkey. Add another pie crust on top, poke a few holes in it, and bake. I know I'm leaving something out, but aside from making the crust, it was really easy.

Turkey and Egg pie for me please.

saw it on Rachel Ray this morning. She made Turkey croquettes. It looked really yumm-o! She took left over turkey, mashed potatoes, 1 egg (raw), salt, pepper, onion, garlic, mixed it all up, dredged it in bread crumbs and parmasean cheese. Then pan fried it in EVOO.

That all sounds, very good, Cajun Lady!! Thank goodness I can't cook!! Wish I had a good Cook to make it for me. Hope you have a good Day, Shopping, as well.

There is no such thing that is as American as a Turkey and dressing with mayo sandwich. Any thing else is un American.
No way.
