You said easy. It doesn't get any easier than this, and it's idiot-proof (not that you're an idiot, mind you).

12 oz. pkg. Nestle semi-sweet chocolate chips
14 oz. can sweetened condensed milk
2 t. vanilla (more or less to taste)

Melt the first two ingredients over medium heat in a saucepan. When completely melted, remove from heat and add vanilla and stir with a metal spoon until fudge looks glossy and starts to pull away from the sides of the pot. Pour into an 8 x 8 glass baking dish which as been greased up with butter (I use Release non-stick foil to line the dish instead, and when it hardens, peel it off and put the fudge back in the glass dish).

Let cool, then refrigerate a couple of hours. This always firms up, never gloppy. Not a fudge recipe for purists... but you did say EASY! And it tastes like fudge. I like to pour melted Reese's peanut butter chips over the top of the cold fudge. You can add nuts to the recipe too; just stir in when you add the vanilla.

This is the BEST and the EASIEST fudge you will ever make. I make it every Christmas and sometimes before and after. It is great.
Ingredients
3 cups (18 ounces) semi-sweet chocolate chips
1 (14-ounce) can EAGLE BRAND? Sweetened Condensed Milk (NOT evaporated milk)
Dash salt
1/2 to 1 cup chopped nuts (optional)
1 1/2 teaspoons vanilla extract
Instructions
In heavy saucepan, over low heat, melt chocolate chips with EAGLE BRAND? and salt. Remove from heat; stir in nuts (optional) and vanilla.
Spread evenly into wax paper lined 8- or 9-inch square pan. Chill 2 hours or until firm.
Turn fudge onto cutting board; peel off paper and cut into squares. Store covered in refrigerator.

2 cups of sugar
1 tablespoon of cocoa
1 teaspoon of Vanilla essence (optional)
Half a cup of milk

Grease a heat proof dish and put aside

Mix all ingrediants in a large saucepan put on low - medium heat stiring constantly

Bring to the boil reduce heat and simmer for 3 minutes or until fudge forms balls when small amount is dropped off a spoon into cold water. (I usually time it with a stop watch for 3 mins) never had a problem

Pour into greased heat proof dish

Leave to set for 10 - 15 mins

Eat and enjoy
