I think this will work fine for just about anyone.

Easy Taco Casserole
1 # ground beef
1 can mushroom soup
1 can rotel tomatoes
1 taco kit
1 block cheese, shredded
Brown ground beef and drain. Add mushroom soup, rotel tomatoes, taco seasoning and taco sauce from kit. Heat together. Take taco shells and heat according to package directions in oven. (Will not work if heated in microwave.) Crumble half of heated taco shells and line bottom of square pyrex dish. Add beef mixture, then crumble other half of shells over beef mixture. Layer shredded cheese over shells. Cover with foil and heat in oven for 25 - 30 minutes on 350 degrees.

Great idea . . .Tacos by themselves are messy and a casserole is a complete meal in one dish.

* * * Easy Mexican Taco Casserole * * *

11/4 lb ground beef
1 large red onion
1 can of tomatos without salt
2 jalapeno pepper, chopped and seeded
1 (15 ounce) can black beans, drained
1/2 of long grain white rice
1cup Pace Picante Sauce and
1/2 cup to have right consistency
1 (1 1/4 ounce) package taco seasoning mix ,
get either mild or spicey to what your fancy.
1 (2 cup) package of shredded Mexican 3 cheese,
1 cup of Sour Cream
Plenty of crushed plain tortilla chips

Basically:
-Cook rice separately
-Brown ground meat, then add jalapeno peppers, onions, tomatos, Picante Sauce, water, taco seasoning mix and sauté in frying pan
-then place in casserole dish and mix in beans rice and cheese
-Cover and bake @ 300o for until bubbly
-Mix in sour cream in for muy bien taste.
-Then chop of lettuce rather finely and put on top of dish completely covering it so when you serve it the casserole will be a suprise.
-Serve with tortilla chips on plate

Sombrero Hats are not required for this delicious family dinner unless you are having company and want to entertain them by doing The Mexican hat dance.

NOTES:
-i usually put ritz crackers on top of a Squash Casserole and brown them but the tortilla chips are already cruncny.
-red onions are sweeter, we put them on salads
-i got my black beans in pantry, they are not real good by themselves but are very healthy kind and this is way to have them, to make dish hearty and right flavor in beans to go with other spices.
-use Roma tomatoes (smaller long in size) which are used in Italian Dishes instead or on salads.

Hey they gave me a thumbs-down because i hadn't posted recipe yet and had made corny comment.

Here is my way:
You will need
1 cup of rice (not instant)
2 packets of taco seasoning
1 to 1 1/2 lbs of ground beef
a bag of taco cheese (whatever's on sale works)
a bag of tortilla chips
1 can of campbells fiesta cheese soup
some french fried onions (optional)

so you make the rice, not hard you know 1 cup of rice two cups of water but you ad in 3/4 of a packet of taco seasoning
just before you add the rice to the water
while the rice is cooking brown your beef and try to grind it up real good when browning to make it stretch farther.
next add the other packet of seasoning to your beef and cook as directed on the packet with one exception cook a little longer to let the extra moisture recuce.
By now your rice should be done so take your rice, your beef, a small handful of cheese and that can of cheese soup,DO NOT ADD WATER TO THE CHEESE SOUP! and mix it up real good in your cassarole dish (If you don't have a glass casserole dish make sure you spray it lightly otherwise you're gonna need dynamite to clean that sucker) so where was I? oh yeah So level off your mixture there and cover it thoroughly with cheese I like cheese so I just go nuts ( I never said this was healthy)
Next take a couple of handfuls of tortilla chips and pulverize the hell out of them sprinkle it evenly across the top so you get a nice crunchy topping then I add some French fried onions because I like them and if I'm cooking everybody else is just going to have to deal with it.
sprinkle a little cheese on top to make it pretty cover it with tin foil, the tin foil is really important or well you don't want to know so just trust me, anyway pop that sucker in the oven at 350 degrees for 20 to 30 min. Then you tell everybody that dinners done love it or shove it. Serve with sour cream, salsa, or whatever you like.
