Debs Chicken Soup

4 chicken thigh fillets diced
1 litre chicken stock
3 carrots diced
4 sticks celery diced
1 large onion diced
2 bay leaves or boquet garni
1 cup dried mixed peas ( here we call it soup mix)
2 cups water
salt/pepper

Bring all to the boil, simmer for 2 hours till soup mix is cooked.

My family flips out over this very easy recipe!

2 49 oz cans chicken broth
2 carrots
2 stalks of celery
12 oz (approx) any kind of uncooked noodles
3 skinless chicken breasts, cooked and cut in bite sized pieces
pepper to taste

Mix broth, pepper, carrots and celery in a large pot. Heat to boil. Stir in noodles and chicken. Cook over medium heat until noodles are done. Enjoy!

I have two for you. One is a white chicken soup and the other is red:

With both: You are going to boil the chicken in your favorite seasons in chicken broth, a boion or if you must water. You want to boil the chicken on medium heat until it is tender and falls off the bone

White Soup - In a large pot, take your favorite veggies and bring them almost to the texture you want, cook these right in the pot with the chicken that you cooked. Look at the directions for the noodles or rice you want to add, add these items in the correct time, if you have to add more water or liquid add more seasoning. Cook until everything is done.

Red Soup - do the same thing, but incorporate tomato paste or sauce.

Grandma's HomeMade Chicken NOODLE Soup

Broth-

Large Stock Pot

1 Whole fryer or roaster chicken.
Enough Water to cover the Bird
6 Chicken Boullion Cubes

Cook slowly, until the chicken is done, carefully remove bird from broth, skin, debone shredd and set aside.

While your chicken is cooking prepare noodles

6 Eggs
3 Cups Flour
1/4 C Water
Salt to flavor

Mix with hands ( will be sticky) Fold out onto well floured surface I like using my large Plastic Cutting Board. Knead, mixing in more flour until the dough is easy to work with and is no longer sticky. Break up into even sized balls.

Individually roll out each ball, layering and flouring well between each layer. Make sure that you place enough flour between layers so that they do not stick during the next step.

Roll into a jelly roll. Cut into 1/4 strips, I like to use my Pampered Chef Pizza Cutter this works great for this step. Then toss the noodles to seperate them. ( this is why adequate flour is important)

Bring broth back to a rolling boil, add noodles, slowly so that they do not stick, make sure to stir while you do this, add chicken back to the soup mixture. Gently boil for about 30 minutes and than reduce to simmer until the pasta is done. Salt and pepper to taste.

This is a recipie that has been handed down from my grandmother. It's inexpensive you can easily double the pasta recipie without doubling the chicken.

We have never added vegies to this but you could if you like, Carrots and Celery would probably be wonderful with it.

Good Luck and Happy Cooking,
