You can marinade beef for 5 days, chicken for 3 days, fish 2 days, pork 3 days.

There is no such thing as too long. As long as the meat does not go rancid, our meat should be fine. I have left mine up to three days in advance as it gives the citrus juice and vinegar more time to break down the meat and make it more tender.

It will only have marinated for 2 days, so it will be fine.

Depends on the marinade for one thing. But two days in the fridge is fine. When I make sauerbraten I marinade for up to 5 days. That is fairly acidic marinade.
For a brisket to go in my smoker I usually go two days although I usually use a dry rub on brisket.
