Biscuit recipe?!


Question: Has anyone got any recipes for bisquits,im going to ice them for christmas,the ones ive made so far go really hard,i would like them to be a bit softer! any tips!

My favourite recipe, & it's really easy, is for a roll out dough which tastes great and is really easy to use. It also copes with being rolled & rerolled without going too tough.

Use a ratio of 1:2:3 sugar:butter:flour (I normally do a batch which is 4oz sugar, 8 oz butter & 12 oz plain flour).

Soften the butter so it is soft but not runny. Add the other ingredients & mix together until it makes a dough. Then just kneed a bit and roll out.
I sometimes add finely chopped dried fruit e.g. cranberries & raisins - really yummy. Or you could add a bit of vanilla essence.

For Christmas cookies you could add some different spices to taste.
Cook at 160C fan or 180 until lightly brown.

Homemade Custard Creams
8 oz hard margarine
5 oz sugar
10 oz S.R. Flour
2 oz custard powder
1 large egg

Set oven to 350f gas 4. Beat fat and sugar until soft, add beaten egg then dry ingredients. Knead well. Roll out and cut out using a small, plain cutter. Bake on greased baking sheets for 10 mins or until pale golden brown. When cold sandwich pairs together with a little butter cream. Enjoy!
