The molasses in the brown sugar acts as a coagulant and helps thicken the rou in the center. You need to follow the recipe or it won't turn out.

you have to follow the recipe im not yelling at you im only telling you so you can calm down. If you don't follow the recipe it won't come out the way you want it to look and also taste. If you followed the instructions then you'll get a brown cripsy crust and and for the center you will be getting a smoth soft sweet taste of apples and cramel. you can put this question on a cooking website. they might help you last time i went on this website for cooking and it answer all the questions i had just asked. the question you asked ,people all over the world had answerd that. but this is my first time answering one. this is all i know now. but i think when i have some time or a day off from work mabe i can help you go on google and try to remember that cooking website (i will search it in google). this is all i know ok? bye bye!!! :)

u can use cinnamon instead
