How to Bake Home Made Cookies?!


Question: Hey Guys,

I'm looking for a recipe for how to bake home made cookies preferebly chocolate.

Lately, i've been trying out a tasty variety of cookies with things like smarties (an English chocolate) inside but i can't seem to make them close to how i want them.
Also, i would like the cookies to be soft and kinda' chewy when you bite and eat into it. Not hard and crumbly. I live in the U.K, so if any American stores/brands come up i may not be able to obtain those items.

Any help will be greatly appreciated.

Chewy Chocolate Oatmeal Cookies

INGREDIENTS
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips

DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C).
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely

If you already like the taste of the recipes you've tried, try just baking them for less time. Once the edges are just set or just beginning to go golden, you can take them out. Experiment with timing to see if you can make them turn out the way you like.

Alternatively, try using a recipe with more butter (or shortening or other solid fat), that can make for a softer cookie. But even a good recipe for softer cookies will end up hard and crunchy if you bake it long enough. Good luck!

Molasses Cookies with White Chocolate Glaze

3/4 cup shortening
1 cup packed brown sugar
1/4 cup molasses
1 teaspoon vanilla
1 egg
2 1/4 cups Gold Medal? all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup white baking chips
1 teaspoon shortening

1. 1. Heat oven to 375°F. Mix 3/4 cup shortening, the brown sugar, molasses, vanilla and egg in large bowl with spoon. Stir in remaining ingredients except white baking chips and 1 teaspoon shortening. Shape dough into 1 1/4-inch balls. Place 3 inches apart on ungreased cookie sheet.

2. Bake 10 to 12 minutes or just until set. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes.

3. Heat white baking chips and 1 teaspoon shortening in small microwavable bowl uncovered on Medium-High (70%) 1 minute; stir. Microwave 15 seconds at a time until mixture can be stirred smooth. Drizzle over cookies.
(Total time will vary; cook or bake time is per batch.)

High Altitude (3500-6500 ft) Heat oven to 350°F. Use 1 teaspoon baking soda.

1 1/4 cups margarine
2 cups sugar
2 large eggs
2 teaspoons vanilla
2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt

1. I double this recipe.

2. Cream together the margarine, sugar, then add the eggs and vanilla.

3. Blend in the cocoa and add baking soda, salt and blend well.

4. Add the flour into the creamed mixture and fold in the chocolate chips.

1. Heat oven to 375*F.

2. In large bowl, beat sugar, brown sugar and margarine until light and fluffy.

3. Add vanilla and eggs; blend well.

4. Add flour, baking soda and salt; mix well.

5. Stir in chocolate chips.

6. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.

7. Bake at 375*F for 8 to 10 minutes or until light golden brown.
