When do you need to bake pastry blind?!


Question: I know how to blind bake but I cannot remember if you do it when making a Quiche. I have a great recipe using evaporated milk which I sent to my 15 year old Grandaughter, but, for the life of me I cannot remember if I baked the pastry blind first.

Yes you do need to bake blind - or the pastry will go soggy.
For the person who doesn't know what baking blind is:
You simply roll your pastry out to fit the pie dish, then fill it with a layer of baking beans - usually clay ones. Then pre-bake for about 10 minutes on high. Remove from the oven, remove the "BEANS", fill with the quiche mixture and bake until cooked through and golden.
