Christmas cookie question?!
Answers: I would like to start my holiday baking early this year, as I plan on making a bunch of different kinds of cookies. I want them to remain as fresh as possible. Would it be better to make the dough's now and freeze the dough until I am ready to bake, or should I make the dough and bake the cookies then freeze until I am ready to decorate them and use them?
Make the dough and freeze them. baking the cookies already and freezing them would make them taste dry and stale. better to make the dough early and bake them when you want to. much fresher that way :)
I would make the dough and freeze, it will holdup better than the cookies.
OMG-Don't bake and freeze! The thawing out process will ruin it. Freeze the dough, just make sure to wrap it in a couple of layers before you do so it doesn't dry out too bad when thawing.
Freeze the dough. Frozen cookies are ok but they get a bit dry. Refrigerator cookies freeze especially well. I read a quote from a pastry chef in a large hotel in Chicago (can't remember, it might have been the Four Seasons) who had most of his cookies done by November. He said with a gingerbread house to make (the size of a playhouse) he couldn't do it any other way.
Two weeks before Christmas will be better if you are too busy. I think is better only to freeze the dough it's not summer to have pop cookies. ( and it's better for the teeth )
Freeze the dough! If you bake then freeze you'll get a stale cookie.
You can freeze dough for 4-6 weeks. You can thaw it safely in the 'fridge and bring it to room temputure before baking. I always bake at 325 so they bake slower and "brown up" less.
