Answers: that is easy and fast. Maybe a casserole or something like that. I have some rice and some broccoli on hand. Can you help?
Busy Mom's Chicken and Rice w/ Broccoli
2-4 breasts of chicken pound, then simply de-skin and de-bone the chicken)
2 cans cream of mushroom soup
1 box chicken & broccoli rice mix
1 bunch broccoli
Place chicken breast in crock-pot. Pour cans of soup over breasts. Season to your discretion. Cover crock-pot and cook on low for 10 hours. Before you are ready to serve the chicken, prepare box of chicken & broccoli rice according to package. Steam broccoli. Combine the two. Spoon breasts onto plates. The soup makes an excellent gravy topper. Add the broccoli and rice mixture as the side dish.

Broccoli Chicken Casserole
INGREDIENTS
4 cups sour cream
1/2 cup grated Parmesan cheese
2 cups shredded Cheddar cheese
salt and pepper to taste
2 cloves garlic, crushed
1/4 cup butter
2 (8 ounce) packages wide egg noodles, cooked
2 pounds cooked, cubed chicken breast meat
2 (10.75 ounce) cans condensed cream of chicken soup
2 cups sliced black olives
4 heads broccoli, cut into florets
2 teaspoons curry powder
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
In a medium bowl, combine the sour cream, Parmesan cheese, Cheddar cheese, salt, pepper and garlic and mix together. In a large bowl, stir butter into noodles, then stir in sour cream mixture.
In a third large bowl combine the chicken, soup, olives, and broccoli and mix together; add this mixture to the noodle mixture and mix all together. Spread mixture into a 9x13 inch baking dish and sprinkle with curry powder.
Bake at 325 degrees F (165 degrees C) for 30 minutes.
Chicken Broccoli Casserole
INGREDIENTS
8 skinless, boneless chicken breast halves
2 pounds broccoli florets, cooked
2 (10.75 ounce) cans condensed cream of mushroom soup
2 tablespoons mayonnaise
2 cups shredded Cheddar cheese
2 cups dry stuffing mix
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Boil chicken until tender and shred or cut into bite size pieces. Meanwhile, steam broccoli until crisp but tender.
In a small bowl mix together the soup and mayonnaise. Set aside. In a 9x13 inch baking dish layer the chicken, broccoli, soup mixture, and cheese. Sprinkle dry stuffing mix over the top and bake in the preheated oven for 25-30 minutes.
Chicken Soup:
1 whole Chicken (cut into 10 pieces or more)
2 Carrots (bite size)
3 Potatoes (quartered)
2 Onions (quartered)
2 Bay leaves
Salt & pepper to tast
Water enough to cover everything
Put everything into a large pot, boil for 1.5 hours and serve.
Can also be cooked ahead of time and kept in fridge for reheating later. This dish goes well with rice and broccoli.
get a teriyaki sauce and braise the chicken with that. Is the rice white? if so, that's even better with the "oriental" theme. You could arrange the chicken, rice and broccoli in a bowl to make fun, easy teriyaki bowls.

Stir Fry
Cut the chicken into strips and saute in olive oil. Let cook about 3 to 5 min add in any of your favorite veggies that are the same size as the chicken. Saute all together serve over rice
Large supermarkets like WalMart have delicious roasted chickens in their deli section. Fresh roasted each day. We pick them up around 10:00 AM and keep it in the fridge until dinner time, pop it in the microwave and warm it up.

Catalina-dressing chicken:
6 to 8 pieces boneless chicken
1 (8 oz.) bottle Catalina dressing
Preheat oven to 350 degrees. Place chicken on baking pan. Cover with Catalina dressing. Bake one hour.

Season your chicken breasts, dip in bread crumbs (seasoned or not) wrap in bacon, throw in oven at 400 for 35 min or until cooked through.
Serve with white rice and steamed broccoli.

1 cup soy sauce
cut up a whole chicken place in casserole dish add minced garlic and soy sauce. cover. you can even let it marinade for when you are ready. place in microwave 10 min. check and use your judgment. might take 5 min. more depending on microwave. 20 min. max. you will smell it when it is done and it is the bomb. can't get any easier that that.
do what u wish with meat in a microwave as long as you put the lid on the casserole dish.
