lay them out on cookie sheet sprinkle with sugar and cinnamon pour 1/4 c melted butter and roast for 30 min in oven at 325.

add them to a pot roast. You can puree them and add them to a carrot cake.

Mash them like potatoes or sweet potatoes, add some butter, cream/milk, salt, pepper and spice (whatever you like, but I would use the winter spices like cinnamon, clove, allspice, nutmeg) and serve as a side dish...
lets see, my mind is going crazy with ideas. You could mash them up and use them in place of pumpkin in a bread recipe, make pancakes with the mashed carrots.( mix that with 1 tsp. baking powder, 1/2 C flour, brown sugar and an egg.) fry like a pancake and serve with syrup. Or you could just mash them with a bit of cooked turnip, brown sugar, butter, salt and pepper for a very good side. Have fun.
Take a knob of real butter and melt in a wok or frying pan over a low flame. When melted, add a teaspoon full of either caraway seeds or fennel seeds. After frying for about a minute, put in the cooked carrots and heat through, turning gently to coat them with the butter and seeds.
slice and add to them1/2 cup canned milk or cream 2tbs sugar and a pat of butter. heat but don't bring to a boil.

omit the sugar cut the milk to a 1/4 cup and after heating ,cream like potatoes
serve with butter as a side veggie.

heat as before with milk and butter add to cooked potatoes and mash together.

mash and add to a boxed spice or carrot cake.

*****Take some of them in add ginger and orange juice and warm them up, take someone add a little cinnamon raisin and brown sugar, you can add them to a can of Jalapenos and sliced onions to slowly warm it so the flavor gets into the carrots then you could refrigerate them and serve them with Mexican food
u can or u can freeze them for a later use, that is what i did after dinner last night, i froze most all of the veggies to use in turkey soup for another time...

add 1 egg, a few T sour cream, 1/3 cup sugar, 1/2 t vanilla, 2 T flour, 1 t baking soda. Pour into greased casserole & bake at 350 until done...30 minutes or so.
