Here's a very festive, simple appetizer that's pretty, easy and very tasty.
Cream Cheese Christmas Wreath
6 slices bacon, fried and crumbled
16 ounces cream cheese, softened
1/2 cup Miracle Whip
1/2 cup green onion, finely chopped
1 cup Cheddar cheese, grated
Green olives
Pimentos
1 teaspoon seasoned salt
Mix all ingredients EXCEPT olives and pimentos. Shape mixture into a wreath on a plate. (Start out with a ball, and shape the middle with a spoon or glass.) Add olives around the side. Make a bow, using pimentos.
Chill and serve with crackers.
Holiday Breakfast Casserole
Ingredients
Butter for greasing pan
1 (12-ounce) package frozen hash-brown potatoes
1/4 cup (1/2 stick) melted butter
1 cup diced ham
4 ounces Cheddar cheese, shredded
4 ounces Swiss or Jack cheese, shredded
1 (4-ounce) can diced green chilies
2 eggs
1/2 cup milk
1/4 teaspoon salt
Salsa to taste
Instructions
Preheat oven to 425 degrees. Grease 10-inch pie pan with butter. To save time, hash browns can be baked evening before. Ham, cheeses and chilies can be placed on top and refrigerated overnight.
1. In prepared pie pan, spread hash browns. Brush with melted butter and bake 25 minutes.
2. Layer ham, cheeses and chilies on hash browns.
3. Combine eggs, milk and salt. Pour over ham, cheese and chilies.
4. Bake at 350 degrees 30-35 minutes.
5. Place salsa on top before serving.

PUMPKIN JELLY ROLLS
3 eggs, beaten 5 minutes
1 cup sugar
3/4 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
2/3 cup pumpkin, canned
FILLING:
1 cup powdered sugar
8 ounces cream cheese
5 tablespoons butter
1 teaspoon vanilla extract
Add remaining ingredients to beaten eggs. Pour into well greased cookie sheet. Sprinkle with 1 cup chopped pecans. Bake 15-20 minutes at 375 F. Turn out on a tea towel. Sprinkle with powdered sugar. Roll into a roll. Let cool.
Filling: Mix powdered sugar, cream cheese, butter, and vanilla.
When cake is completely cool, unroll cake and spread on filling. Remove towel, roll back into a roll.
I absolutely loooove making desserts for Christmas. One of the most popular treats that I enjoy making are truffles. Here's a recipe that's great!
Ingredients
Truffles:
8 ounces (227 grams) semisweet or bittersweet chocolate, cut into small pieces
3/4 cup (180 ml) heavy whipping cream
2 tablespoons (28 grams) unsalted butter
Different Coatings for Truffles:
Cocoa Powder
Confectioners Sugar (Icing or Powdered)
Toasted and Chopped Nuts (pecans, walnuts, almonds, hazelnuts)
Toasted Coconut
Shaved Chocolate
Instructions:
Place the chopped chocolate in a medium sized stainless steel bowl. Set aside. Heat the cream and butter in a small saucepan over medium heat. Bring to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir with a whisk until smooth. If desired, add the liqueur. Cover and place in the refrigerator until the truffle mixture is firm (this will take several hours or overnight).
Place your coatings for the truffles on a plate. Remove the truffle mixture from the refrigerator. With your hands, or else a melon baller or small spoon form the chocolate into round or mis-shaped bite-sized balls. Immediately roll the truffle in the coating and place on a parchment lined baking sheet or tray. Cover and place in the refrigerator until firm. Truffles can be refrigerated for a couple of weeks or else frozen for a couple of months. Bring to room temperature before serving.
Makes 30 small truffles.

Mom's Oyster Stuffing
1 box STOVE TOP chicken stuffing mix
1 small can smoked oysters
2 tsp. ground sage
Directions
Open can of smoked oysters, drain and rinse, looking for any shell remains. Mince oysters finely. Prepare stuffing mix, using chicken broth in place of water, fold in oysters and extra sage. Bake in buttered baking dish for 30-40 minutes (covered or cover with aluminum foil so that it doesn't dry out) until heated through
