Jello Thumbprints

RECIPE INGREDIENTS:
1 cup (2 sticks) unsalted butter, softened
1/2 cup firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon salt
Granulated sugar for rolling the cookies in
About 1/2 cup jelly or preserves
1. In a large bowl, using a wooden spoon, cream the butter and brown sugar together until smooth. Stir in the egg and vanilla extract until combined.

2. Gradually stir in the flour and salt. Cover the dough and refrigerate it for at least 1 to 2 hours or until the dough is firm enough to roll into balls.

3. Heat the oven to 350. Form scant tablespoonfuls of the dough into 1-inch balls. Roll the balls in a bowl of granulated sugar. Place the balls on an ungreased baking sheet, leaving 2 inches between them.

4. Using your thumb, your knuckle, or the end of a wooden spoon, press an indentation into the center of each cookie. If the cookie cracks, just press the crack together to make it smooth. Fill the center of each cookie with about 1/2 teaspoon of jelly. Bake for 10 to 12 minutes or until very lightly browned.

5. Cool on the baking sheets for about 2 minutes. Using a metal spatula, transfer the cookies to a wire rack to cool completely. Repeat until all the dough is used.

6. These cookies can be prepared up to 1 week ahead of time and stored in an airtight container at room temperature. Makes about 4 dozen Jolly Thumbprints.

7. KIDS' STEPS: Kids can mix and measure ingredients, roll the dough into balls, make thumbprints, and fill cookies with their favorite flavor of jelly or preserves.





Santa's Hat
RECIPE INGREDIENTS:
2 egg whites, at room temperature
1/2 teaspoon cream of tartar
1/4 teaspoon vanilla extract
1/2 cup sugar
Red colored sugar
1. Heat the oven to 200° F. With an electric mixer, beat the egg whites until soft peaks start to form. Beating all the while, add the cream of tartar and vanilla extract, then slowly add the 1/2 cup of sugar. Continue to beat until the peaks stiffen.

2. Spoon the meringue into a quart-size plastic bag. Snip off a corner and pipe 2 dozen 1 1/2-inch-tall Santa hat triangles onto a parchment-lined baking sheet (you should have about 1/4 of the meringue left).

3. Sprinkle the triangles with the red sugar, then use the remaining meringue to give each one a pom-pom and trim. Bake the hats until they're hard but not browned, about 1 hour and 20 minutes. Turn off the oven and leave the hats in it for an hour to crisp before removing.

RECIPE INGREDIENTS:
1 cup almonds
1 cup packed light brown sugar
1/4 cup honey
1/4 cup unsulfured molasses
1 large egg
Finely grated zest of 1 orange
1/2 cup dark raisins
2 tablespoons coarsely chopped crystallized ginger (optional)
1 3/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
Confectioners' sugar, for glaze
1. Toast the almonds in a medium-size nonstick skillet over medium-high heat for 6 minutes and set them aside.

2. With an electric mixer set on medium speed, beat together the brown sugar, honey, molasses, egg, and orange zest in a mixing bowl until smooth.

3. Combine the almonds, raisins, and crystallized ginger, if you're using it (for extra zip), in a food processor. Pulse repeatedly to finely chop the mixture. (You can also finely chop the ingredients by hand.) Stir the nut mixture into the sugar mixture.

4. Sift the flour, baking soda, spices, and salt into a separate medium-size bowl. Then stir the dry mixture into the liquid a third at a time, stirring well after each addition. The dough will be quite dense and sticky.

5. Scrape the dough onto a well-floured 3-foot-long sheet of plastic wrap. Generously flour the dough. Then, using floured hands, knead the dough several times to smooth it. Flatten the dough into a 1-inch-thick square and wrap it in the plastic. Slide the dough into a plastic bag or wrap it in aluminum foil and chill it until firm, several hours or overnight.

6. Heat the oven to 350 degrees. Line a baking sheet (preferably not a dark one) with parchment or lightly greased aluminum foil. Set the sheet aside. Transfer the dough to a generously floured sheet of waxed paper and roll it into a 1/4-inch-thick rectangle or square. Cut the dough into cookies that measure about 2 inches square.

7. Transfer the squares to the baking sheet, spacing them about an inch apart. Bake the cookies on the center oven rack for 12 to 13 minutes, 1 sheet at a time. When done, the cookies will have formed a crust, but they should still feel soft to the touch. (Tip: The cookies stay chewier if you bake them less and put them in an airtight container while they're still slightly warm. If your family prefers a crisper cookie, just bake them a little longer and let them cool completely before you store them.) Transfer the cookies to a wire rack and, while they are still quite warm, dredge them in confectioners' sugar. When they've cooled completely, dredge them once more. Makes about 18 to 24 cookies.

2-1/2 cups all-purpose flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter or margarine
1-3/4 cups sugar
1-1/2 teaspoons vanilla
2 eggs
1-1/4 cups milk

Directions
1. Grease and lightly flour two 8x1-1/2-inch or 9x1-1/2-inch round baking pans or grease one 13x9x2-inch baking pan; set pan(s) aside. Combine flour, baking powder, and salt; set aside.

2. In a large mixing bowl beat butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add sugar and vanilla; beat until well combined. Add eggs, one at a time, beating 1 minute after each. Add dry mixture and milk alternately to beaten mixture, beating on low speed after each addition just till combined. Pour batter into the prepared pan(s).

3. Bake in a 375 degree F oven for 30 to 35 minutes or until a wooden toothpick comes out clean. Cool layer cakes in pans on wire racks for 10 minutes. Remove layer cakes from pans. Cool thoroughly on racks. Or, place 13x9-inch cake in pan on a wire rack; cool thoroughly. Frost with desired frosting. Makes 12 servings.

Yellow Cupcakes: To make cupcakes, grease and lightly flour thirty 2-1/2-inch muffin cups or line with paper baking cups. Prepare cake as directed in Step 2. Fill each cup half full. Bake in preheated oven for 18 to 20 minutes or until a wooden toothpick inserted in center of a cupcake comes out clean. Cool on a wire rack. Makes 30 cupcakes.

Ingredients
3 ounces unsweetened chocolate
1/2 cup butter
1 cup sugar
2 eggs
1 tsp. vanilla
2/3 cup all-purpose flour
1/4 tsp. baking soda
stir-ins*
1 cup dark chocolate pieces
1/2 cup chopped nuts (optional)
1 recipe Chocolate Drizzle (optional)**

Directions
1. Preheat oven to 350 degrees F. Coarsely chop unsweetened chocolate. In saucepan melt butter and chocolate over low heat, stirring occasionally. Remove from heat; cool.

2. Line 8x8x2-inch baking pan with foil. Spray with nonstick cooking spray; set aside. Stir sugar into melted chocolate mixture until sugar is dissolved. Add eggs, one at a time, beating with wooden spoon just until combined. Stir in vanilla.

3. In bowl stir together flour and baking soda. Add stir-ins. Add flour mixture to chocolate mixture; stir just until combined. Stir in dark chocolate pieces and nuts. Spread batter in prepared pan.

4. Bake 35 minutes or until edges are set and begin to pull away from sides of pan. Cool in pan on wire rack. Spoon chocolate Drizzle across top. Cut into bars. Makes 16 brownies.

5. *Sweet stir-ins: Add 1/2 cup dried fruit soaked in sparkling wine for 30 minutes, drained, and chopped; or 3/4 cup candy-coated peanut butter pieces to batter.

Spice stir-ins: Add 1 tsp. ground cinnamon or ground ancho chili powder; 2 tsp. orange peel; or 1 Tbsp. expresso powder to flour mixture.

6. **Chocolate Drizzle: In bowl stir together 1/2 cup softened powder sugar, 1 Tbsp. unsweetened cocoa powder, 1/4 tsp. vanilla, and 1-1/2 tsp. milk. Stir in additional milk, 1 tsp. at a time, until icing is drizzling consistency.

here's an EASY bar recipe
melt one stick butter in cake pan while preheating 350 oven
crush one pkg graham crackers into crumbs and press into bottom of pan with melted butter
top with hand fulls of toppings like choc chips, chopped nuts, coconut, raisins, butterscotch chips, whatever you have on hand
then pour one can sweetened condensed milk evenly over the top (make sure you get it all out!)
bake at 350 for 24 minutes till browned on top
wait until completely cooled before cutting into squares

everyone loves these when I bring them into work and for parties! they all want the recipe!

Banana Brownies

2 1/2 cups flour
2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
12 ounces semisweet chocolate chips
1 cup margarine, divided
1 cup granulated sugar
2 eggs
1/2 cup milk
3 cups puréed very ripe bananas

Mix well flour, salt, cinnamon, baking powder, and baking soda. Set aside. Place chocolate chips and 1/2 cup margarine in top of double boiler over hot water; stir until melted and smooth. Remove from heat; cool.

In medium bowl cream remaining 1/2 cup margarine and the sugar until light; beat in eggs, milk and bananas. Stir in flour mixture until well blended. Stir in chocolate, leaving mixture slightly marbleized. Turn into greased 13 x 9-inch baking pan. Bake at 350 degrees F for 25 to 30 minutes or until sides just begin to pull away from pan. Cool in pan on rack. Cut into bars.
