FANCY FRANKS APPETIZER

1 16 oz package cocktail weiners
1 13 oz can pineapple chunks (in syrup)
1/2 cup chili sauce
1/2 cup currant or grape jelly
1 1/2 tablespoons lemon juice
1 1/2 teaspoons yellow mustard
2 tablespoons pineapple syrup (from can)

Drain pineapple, reserving 2 tablespoons syrup.

In a skillet, sauté all ingredients for 15 minutes on medium high heat.

Transfer to a chafing dish and provide toothpicks when serving.


CAROL'S ANGEL FLAKE BISCUITS

1 pkg. dry yeast in 1/2 c. lukewarm water
5 c. flour
1 tsp. baking soda
1 tsp. salt
3 tbsp. baking powder
3 tbsp. sugar
3/4 c. shortening
2 c. buttermilk

Dissolve yeast in 1/2 cup lukewarm water; set aside. Sift flour, baking soda, salt, baking powder and sugar. Cut in the shortening until it is well blended in with dry ingredients. Add yeast mixture and buttermilk together. Stir into dry ingredients. Make sure that you stir until it is well moistened. Do not over mix.

Roll out portion you will be using at 3/4 inch thick (use round cookie cutter). Place on greased pan and bake 12 minutes at 400 degrees. Remaining dough will keep in the refrigerator for several days in a well covered bowl.



BREAD PUDDING

3 to 4 c. cold biscuits (crumbled)
1 1/2 c. sugar
3 eggs
2 tsp. vanilla
1 stick butter
3 1/2 c. milk

In bowl place crumbs, sugar, beaten eggs, vanilla and melted butter. Stir in milk and mix well. Place in baking dish. Bake about 45 to 50 minutes at 350 degrees

Here are a couple I've used (that are my own recipes)

Pineapple Cheese Ball

1 8oz pkgs. cream cheese, softened
2 cups chopped nuts
1 8oz can crushed pineapple, drained well
? cup chopped green pepper (very finely chopped)
2 tbls. Chopped onion (finely chopped)
seasoned salt

Gradually stir pineapple into softened cream cheese. Add 1 cup of nuts (save the rest to roll cheese ball in). Add green pepper, onion and salt. Mix well. Refrigerate and roll into a ball, or two smaller ones - then roll in nuts.


Sausage Appetizers

1 lb. hot bulk sausage
10 oz. grated Cheddar cheese
3 c. Bisquick
1 tsp. salt

Grate cheese and let stand until pliable. Add Bisquick, sausage, and salt. Mix by hand. Shape into small balls. Bake at 375 degrees for 12 minutes. Serve warm. Makes 50 appetizers.

My favorite appetizer is a chunk of cream cheese on a plate with a jar of salsa poured over it. Have a big bowl of tortilla chips nearby.If you have time you can cut the cream cheese into smaller cubes.
Mix a bottle of smoky BBQ sauce with a jar of pineapple topping in a crock pot. Add a couple of pounds of sliced polish sausage and heat. Provide a ladle.

Depends on what type of appetizers you want. I like to serve an assortment that includes hot appetizers, hot and cold dips, canapes, etc.

Here are some ideas for you:
Cold-
1. Fresh vegetable platter with Ranch dip.
2. Cheese platter (several types of cheeses).
3. Crackers topped with a variety of things like cream cheese and smoked salmon slices, seafood sauce mixed with cream cheese then topped with shrimp, shaved roast beef topped with grated jack cheese and broiled, etc.
4. Spinach dip in a sourdough bowl. Use the bread from the inside as the dipping pieces.
5. Red or green pepper jelly on top of cream cheese, served on or with cracker.
6. Layered dip (mexican).

Hot-
1. Hot crab dip.
2. Hot artichoke dip.
3. Bacon-wrapped waterchestnuts (rolled in brown sugar and baked).
4. Balsamic vinegar and honey chicken drummettes (marinate chicken drummettes in a blend of balsamic vinegar, honey, garlic powder, salt and pepper then bake the chicken until done. Sprinkle with sesame seeds.)
5. Little smokies cocktail wieners with a barbecue dip. Use frilly toothpicks.
6. Endive lettuce leaves filled with chopped chicken thigh meat cooked with peanut butter, soy sauce, sugar and hot sauce. Sprinkle with chives.
4. Bacon-wrapped asparagus (cook under broiler)

Oh, I just saw you wanted easy-to-make appetizers. Then, go for the hot pepper jelly over cream cheese (with crackers), bacon-wrapped asparagus, veggie tray, chips and dips, cheese tray and little smokies. Those are easy.

Have fun!

Put some assorted deli meats out on a nice tray (use leaf lettuce for garnish). Make another tray with lettuce, tomatoe, cheese, onions. Buy a huge bag of dollar rolls. Let your guests build their own sandwiches. Its nicer than chips and dips and cost about the same. Its classy. You will, of course need some condiments, like mustard, mayo, etc. Then you take some martini glasses and fill them with M and M's for a nice cheap dessert. If you do this right, you can make it look like you spent hundreds of dollars.

Even tho I love to cook and serve, time is always a factor when throwing a party. So I go to Sam's Club to their freezer section. They have several items there that take very little time and they look like I've been slaving for days. (then I hid the boxes) ;) One of them are little rolled sandwiches- they're really and all you have to do is thaw them. If you have a Sam's (or I would imagine Costco has them too) try that. Or maybe even try you local supermarket. Good luck and have fun !!

veggies and dip, taco dip or a 7 layer bean dip and chips, frozen meatballs or little weenies in crock pot with one jar jellied cranberry sauce and 1 jar chili sauce, make sandwiches and cut into quarters with toothpick with olive on it

veggie pizza-
layer 2 pkg croissants on cookie sheet and bake till brown
mix 2 pkgs cream cheese with some mayo, garlic powder, onion powder, and dill weed and then spread on COOLED croissant
chop up toppings like broccoli, carrots, cauliflower, olives, seeded tomato, shredded cheese-whatever you want-and layer on top
cut into squares and serve

shrimp dip-
spread cream cheese on a plate
pour on one jar of cocktail sauce
layer shrimp on top (small pre cooked shrimp)
serve with ritz crackers

here's an EASY bar recipe
melt one stick butter in cake pan while preheating 350 oven
crush one pkg graham crackers into crumbs and press into bottom of pan with melted butter
top with hand fulls of toppings like choc chips, chopped nuts, coconut, raisins, butterscotch chips, whatever you have on hand
then pour one can sweetened condensed milk evenly over the top (make sure you get it all out!)
bake at 350 for 24 minutes till browned on top
wait until completely cooled before cutting into squares
