Does cornbread double in size as its cooking?!

if you bake it in the oven, yes it will...sorta
not exactly double in size but it will rise.
just don't fill it all the way.a little less than half is enough. (finish product will fill the whole pan)

You don't have to use all of the 12 "cups" on the pan.
you can make as little as one or 12.

you can cut with a knife after its well baked.
if this is your first time, i suggest you get instructions online or buy cornbread mix and the recipe should be on the package

Yes it does. If you are making cornbread and you put the mix into a pan or a muffin pan, and then into the oven. The heat from the oven will make it rise into some delicious cornbread muffins. I love cornbread it is delicious. I had made 4 pan fulls this thanksgiving.
Corn bread rises, but does not double. Whatever size pan the recipe calls for should be sufficient for the size of that recipe.
IF you decide to double the recipe or triple it, your best solution is to get pans that same size as the one suggested in the recipe.
