first off.....line your baking pan.......parchment paper if you have it.....if not, aluminum foil. do not grease the pan.......that will make it burn also. what baking instructions don't tell you is that ovens vary. you may not need as much time as they say, or you could need more. the key to moist cookies is to UNDER BAKE them just a little. you want them to still be soft when you take them out. they harden as they cool. start with 5 mins. rotate the pan and try another 3 mins. they may feel soft, but let them cool. they should be perfect. as long as the color of the cookie is the same all over you're good. if the middle is darker, they're not quite ready. if you have to add more time, do it in incriments of no more than 1-2 mins.
What temperature is you oven set for?A moderate oven usually is what is used for most cookies. 350 degrees to 375 depending on the type of cookie. Maybe your oven is either turned to high, or it needs to be callibated (meaning it burns higher than it actually says)
Try putting the cookies in and start watching for them to be done after about 7 minutes then. Take them out when they just start to brown at the edges and start to appear drier on the surface. Check them every 2 minutes thereafter if not done at 7 minutes.
open the oven and check them after 8 or 9 mins
the trick is to take them out early and get them off that cooking pan a minute after you take them out
no matter what i do i ALWAYS have that problem with the peanut butter cookies :( BUT with any other kind put the oven rack all the way up and as soon as you turn the oven (dont let it preheat) on put the cookies in and watch them..it should work better!
when u cook remember that cooking isn't always dependable and u can't look at the time they give you. you just have to look and see if they are golden brown and keep checking on them so it wont be doughy and raw or too late so it is burned.
Follow the instructions explicitly. Maybe your oven is just high, so get an oven thermometer to check. If it is, set it slightly lower. Check the cookies at 10 minutes ans take them out at 15 even if they don't look done. Let them sit two minutes, then remove from the cookie sheet.
Get a high quality 1/2 sheet pan at a restaurant supply store or get one at Williams Sonoma They are nice and heavy and are needed to bake . Also get a oven temp gage
