butter cream icing. cream together butter or marg with icing sugar, at end you could fold in some orange peel this is yummy.

try a lemon flavored one its good.

you can use cupcake icing but with less sugar, it's made of butter and sugar.

just a plain vanilla frosting, or you could use add a little cinnamon to it to give it a spicy flavor.

you can do a glaze.mix some powder sugar with milk and glaze it. ad some lemon juice to it or orange juice to add flavor.

I always use this one and drizzle it. Just mix icing sugar with orange juice, it gives a nice colour and adds a nice fruity flavour.

this is a great icing for a carrot cake. give it a shot.

1/3 c. buttermilk
1 c. sugar
1/2 tsp. soda
1 tsp. white Karo syrup

Bring quickly to a boil and spoon over cake while still hot. Delicious!

Vanilla icing sugar. Simple and delicious!!

Quick Caramel Frosting

8 tablespoons (one stick butter)
1/2 cup packed light brown sugar
1/2 cup packed dark brown sugar
1/4 whole milk
2 cups confectioners' sugar, sifted
1 teaspoon pure vanilla extract

1. Place the butter and the brown sugars in a medium-size heavy saucepan over medium heat. Stir and cook until the mixture comes to a boil, about two minutes. Add the milk, stir and bring the mixture back to a boil, then remove the pan from the heat. Add the confectioners' sugar and vanilla. Beat with a wooden spoon until the frosting is smooth.

2. Use immediately (while still warm) to frost the cake of your choice or the frosting will harden. If it does harden while you are frosting the cake, simply place the pan back over low heat and stir until the frosting softens up.

Take some powder sugar and some lemon juice. Mix a little juice in the sugar at a time till you get a syrup consistency/ Pour over the cold carrot cake it will dry to a white sugar coating. The Swiss use that kind of icing on carrot cake all the time.

Just make regular white butter cream frosting.
