Serving salmon at a christmas party, how do I prepare it?!

being that I am originally from the pacific northwest of the US, salmon is one of my favourite foods... not only to eat, but to prepare in various ways... one of my favourite ways to prepare it on a grill, is to simply either slice it into "steaks" or fillets, and lay it in some aluminium foil, cover it with slices of sweet, or red onions (sweet has a nicer flavour, but red makes a "prettier" presentation), and sliced lemon. the lemon and onion add a nice flavour to the fish, and leave it not needing any condiments. as far as smoked salmon... you can buy a regular salmon (I sometimes use leftovers from the grilled salmon I just discribed), and mix it with a "liquid smoke" that will give it the smoke flavouring, without the added cost of buying it smoked. once you have attained the desired "smoke" taste to it, "flake" the fish, and mix with cream cheese, and wrap in a plastic wrap.. refrigerate it for an hour or so, to "set up" then form it into a ball.. you can roll the ball in either dried parsley, or a favourite chopped nuts (may people use smoked almonds), and serve with a nice table cracker... I've yet to find the person that didn't love this way of serving smoked salmon!

try food network.com . try bobby flay recipes for salmon. lemon juice , salt, pepper and fresh dill.make sure you brush oil on it before you put it on the grill.

Marinate in teriyaki sauce, then grill. When removed to platter, brush w/ a bit of hoisin sauce. Mmmm!

When I was up in Juneau, Alaska, they cooked their salmon over hickory wood. They basted the salmon (fillets) with a 3-2-1 mixture. 3 parts brown sugar, 2 parts, butter and 1 part lemon juice. It was very good. That was a business that made lots of money so they must have a good recipe.

I make it that way for most people but if a person is on a low-carb diet, I put a layer of mayonnaise over the salmon and sprinkle on onion powder and dill. The mayonnaise keeps the salmon moist and not dried out. It takes a little longer to cook the salmon with the mayonnaise than it does to cook the one with the 3-2-1 sauce on it. I wrap both in foil but since you are doing it over a grill, I would still wrap the mayonnaise one but not the 3-2-1 one.

If you grill your salmon it will be delicious without anything added to it at all. Have some salt and lemon handy for those who might like to add some.
