Question: How to makke turkey soup in slow cooker? I remeber that I ate once and it was delicious: it was included celery, roastet turkey( leftover), carrots, probably potatoes and vermichelli, no tomatoes. Please help me to find exact recipe! I usually make Turkey Soup in a big pot so the whole leftover carcass will fit in, but if you want to make it in a Crockpot, that will work too. You don't want to use the "good" parts of the turkey that still have a lot of meat on them. What you want is the "carcass" parts - the back, the wings, the last bits of breast. Cut or tear up your carcass as best you can and put it in the Crock Pot. (Make sure the lid will still go on.) Add any jellied bits of broth that might be hiding under the turkey and any leftover skin. Throw in a stalk of celery, a carrot and an onion you have quartered. Fill the pot with water to about an inch from the top, cover and turn the pot on Hi for an hour or so, then turn it to Lo and go away for 8 or 9 hours.

Strain the contents of the pot into a big bowl. Save all the juice and throw everything else away. (You might want to quickly wash the pot first so you get a nice, clear soup.) Now add to your crockpot -

a medium to large onion, chopped pretty small
a couple of carrots, diced (again, fairly small)
diced celery
a handful of rice (not too generous, it swells a lot in soup!)
leftover turkey meat, torn or cut into reasonably small pieces
a bay leaf

Cover with broth and cook ~8 hours on Lo till the veggies are tender. About an hour before you want to serve up, season with salt, pepper, thyme & savory. Remove the bay leaf.

If you want to add potatoes or turnip, just cut them small and add to the pot along with the other vegetables.

If you intend to freeze this, leave out the rice, potatoes or any pasta you might want to add as those products don't freeze very well. Put that in later when you are reheating the soup.

Turkey bones and enough water to cover them, boil for 50 min, drain through strainer into container for future use in crock pot.

To Crock Pot add:
1 cup white wine or 1/2 cup dry sherry
1 clove garlic
1 bay leaf
1 carrot chopped
1 onion chopped
1 stalk celery chopped
1 cup cubed turkey meat
2 potatoes cubed
1 Tb parsley
1 tsp basil
salt and pepper
1 beef boullion cube (optional and for heartier flavor)
Cover all of this with the stock you saved and add 2 additional cups. (or water if you didn't have enough)

Turn on high for 3 hours, on low for 5 hours.

Add cooked vermicelli noodles one hour before serving. (Don't add uncooked vermicelli to the soup in the beginning or they will turn mushy).
