1teaspoon baking powder
1/2teaspoon baking soda
1/4teaspoon salt
Unsweetened cocoa powder
1(1-ounce) square unsweetened chocolate
1cup whipping cream
3/4cup miniature marshmallows
1-1/2cups powdered sugar
3to 4 tablespoons light cream

2.Beat egg yolks and 1/2 cup granulated sugar in medium bowl until light and fluffy. Beat in melted semisweet chocolate. Add water and vanilla. Mix until smooth. Sift flour, baking powder, baking soda and salt together. Add to chocolate mixture.
3.Using clean beaters and large bowl, beat egg whites until soft peaks form. Gently fold in chocolate mixture. Pour into prepared pan.
4.Bake 8 to 9 minutes or until wooden toothpick inserted into center comes out clean. Carefully loosen sides of cake from foil. Invert cake onto towel sprinkled with cocoa. Peel off foil. Starting at short end, roll up warm cake, jelly-roll fashion with towel inside. Cool cake completely.
5.Meanwhile, place unsweetened chocolate in small microwavable bowl. Microwave on HIGH 1 to 2 minutes or until almost melted, stirring after each minute. Stir until smooth. Set aside to cool.
6.Beat whipping cream in separate small bowl with electric mixer at high speed until thickened. Gradually add remaining 2 tablespoons granulated sugar, beating until soft peaks form. Fold in marshmallows.
7.Unroll cake; remove towel. Spread cake with whipped cream mixture; reroll cake without towel.
8.Combine melted unsweetened chocolate and powdered sugar in small bowl. Stir in light cream, 1 tablespoon at a time, until frosting is of spreading consistency. Spread over cake roll. Sprinkle cake with pecans. Refrigerate until serving time.

red velvet or spice cake. It depends on what type of icing you are using . Remember that pumpkin, spice, and carrot use cream cheese icing.
When making a pumpkin roll, you don't really taste pumpkin, it's most likely because the cream cheese filling! But a substitute for the pumpkin would have to be just as sweet as the pumpkin but not over power the cream cheese filling! I would suggest trying maybe bananas as substitute that would be a very nice combination you could do sweet potatoes/yams but you would have to cook them and add brown sugar, butter, nut meg, try to bring a more sweeter flavor to it, then make it into the bread like dessert background. You could also do a squash but one of the sweeter ones such as acorn or banana squash! You would also have to sweeten those up as well same ingredients as the yams! If you need any more help feel free to e mail me! and If I can think of anything else I will send it your way! good luck
