Ok guestion about grandmas coffee cake?!


Question: Every year for Christmas morning my grandma fixed what she called eggless milkless butterless coffee cake. I think that she altered an old war time cake. But she has long passed away and never shared her recipe. Could anyone help? Thanks!

I think it is called Coffee Cake because it was served with coffee, not because it had coffee in it. That was the thing back then, to get up early and have an easy something to throw together and warm when people woke up, and it would go with their coffee. Plus, the smell of this cake and coffee brewing at the same time gets people out of bed and headed for the table (or couch).

Coffee Cake:
3 c. flour
1 c. sugar (can use Splenda)
2 tsp. soda
1 tsp. salt
2 tbsp. vinegar
3/4 c. oil
2 c. cold water
2 tsp. vanilla

Topping:
1 cup flour
1 cup chopped nuts (pecans or walnuts, or even almonds)
2 tablespoons sugar
1 Tbsp cinnamon

Mix everything for the cake in a bowl and pour into ungreased cake pan.

Mix everything for the topping in a bowl and sprinkle on top.

Bake at 350 degrees for 20 to 30 minutes, or until done.

Unfortunately, you are wrong. Coffee cakes was very hard to obtain in the war. Your Grandma may have altered a different recipe to coffee cake or got the recipe from a book.

I don't know if this is it but look it over.

Milkless, Butterless, Eggless Spice Cake Recipe
Ingredients:
1/2 c. sugar
1/2 c. shortening
1 c. molasses
2 1/2 c. flour
2 tbsp. cocoa
1 1/2 tsp. salt
1 tsp. allspice
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. ginger
1 c. hot coffee
Directions:
Cream sugar and shortening and add molasses. Add flour, to which other dry ingredients have been added. Mix thoroughly, then add hot coffee, stirring constantly. Beat well. Bake in one or more greased and floured cake pans, depending upon thickness desired. Bake in 350 degree oven for 45 minutes. Cake may be eaten plain or iced.
