Why does my meat taste funny?!


Question: It's my meatballs! They have this liver-y (liver-ish?) flavor that I'm not into. What's the deal? I cook all the time and this is a first.

It's really a shame that you cooked already and then find that you do not like the taste.
If there is a chance that the meat was going bad before you started, I would throw it out.
The other reason may be from a certain spice or herb that was added, but more likely the meat was off a bit.
Sorry, but I had to tell you what I would do.

simple solution: don't eat meat

try adding a little bit of beef broth into your mix, not to much to where they wont hold, and you can even simmer them in beef broth for about ten minutes before you put them in the oven. If your adding onions try leaving them out next time. I would have to know your ingredients to help you further. good luck next time. (I personally would not add pork with meatballs)

When in doubt...throw it out. The meat may have become spoiled and never take a chance that you, your family or friends may become ill.

I am assuming you used the meat you are used to (beef or pork). Accidentally substituting another ground meat (lamb or turkey) can cause a different flavor.

Outside guesses would be that the meat was either going bad (but you would've smelled it when prepping it) or the spices/sauce involved (not too likely).

The most likely cause is low quality meat. Good quality meat is hard to ruin unless you overcook it. I would buy from a reputable butcher.. I also LOVE Costco meat... have never had a problem and buy all my meat there now.
