What is a good sauce for duck besides orange-I don′t have an orange in my house?!


Question: Pan fry a duck breast, remove when cooked and remove excess fat. Deglaze the pan with red wine, add few chopped prunes and fresh ground cinnamon. Season. Add a little butter and simmer.

cherry or cranbury

After you roast it, or pan sear, remove all but 2 Tbs fat and saute a small diced onion until golden, deglaze pan with a little white wine, add salt and pepper and whisk in some (about a heaping Tbs) of honey. Let reduce and finish off the heat with some cold butter (about 4 Tbs.)

Try a simple red wine reduction, perhaps with minced, dried fruit -- cherries or apricots are good -- heated and plumped up in it.

You could cheat and use Chinese Plum Sauce.
