Marzipan
500g (16 oz) sifted icing sugar (confectioner's sugar)
450g ( 1lb) ground almonds
2 egg whites
1/2 tsp vanilla flavoring
1 tsp lemon juice

Sift the icing sugar in a bowl with the ground almonds. Add the remaining ingredients and mix to make a stiff paste. Knead until smooth. (As a substitute to raw eggs it is possible to use a little water).

Almond Paste

INGREDIENTS

* 1 pound blanched almonds
* 1 (16 ounce) package confectioners' sugar
* 3 egg whites
* 1 teaspoon almond extract

DIRECTIONS

Grind almonds in a blender. Thoroughly mix in confectioners sugar. Beat egg whites slightly, then stir into the almond mixture. Add almond extract, using your hands to blend the heavy mixture.

1-1/2 cups blanched almonds
1-1/2 cups confectioners' sugar
1 egg white
1-1/2 teaspoons almond extract
1/4 teaspoon salt

Place almonds in a food processor; cover and process until smooth. Add the confectioners' sugar, egg white, extract and salt; cover and process until smooth.
Divide almond paste into 1/2-cup portions; place in airtight containers. Refrigerate for up to 1 month or freeze for up to 3 months.

Can't provide a recipe different from the ones provided, but have made my own in the past and it taste's so much nicer than the ready made ones you buy from your local shop/supermarkets. Worth a try. Good luck.

Just buy almond paste, it will come out better than if you try and make your own. Are you thinking of Frangipan? This is an almond cream that is made with almond paste and bakes to a cake-like consistency. It is often used in tarts.

the above reipes are good but I would add a teaspoon full of whiskey for an extra bit of flavour (a tip my grandmother gave me)
