Peanut Butter-Toffee Turtle Cookies:
This is so good - you should only do it for Christmas~

Ingredients
1/2 cup unsalted butter, softened
1/2 cup DOMINO Granulated Sugar
1/2 cup firmly packed DOMINO Light Brown Sugar
2/3 cup creamy peanut butter
1 large egg
2 cups BISQUICK Original All-Purpose Baking Mix
2/3 cup almond toffee bits
2/3 cup coarsely chopped USA PEANUTS
2/3 cup NESTLE TOLL HOUSE Milk Chocolate Morsels
10 ounce vanilla caramels
2 to 3 tablespoons whipping cream
1/2 teaspoon vanilla extract
2/3 cup NESTLE TOLL HOUSE Milk Chocolate Morsels, melted


Preparation
TIP: The chocolate drizzle on the cookies will harden as it cools.
Preheat oven to 350°. Beat first 4 ingredients at medium speed with an electric mixer until creamy. Add egg, beating until blended. Add baking mix, beating at low speed just until blended. Stir in toffee bits, chopped peanuts, and 2/3 cup chocolate morsels.

Drop dough by rounded tablespoonfuls onto ungreased baking sheets; flatten dough with hand.

Bake at 350° for 10 to 12 minutes or until golden brown. Cool cookies on baking sheets 1 minute; remove cookies to wire racks.

Microwave caramels and 2 tablespoons cream in a glass bowl at HIGH 1 minute; stir. Continue to microwave at 30-second intervals, stirring until caramels melt and mixture is smooth; add remaining cream, if necessary. Stir in vanilla. Spoon caramel mixture evenly onto tops of cookies; drizzle evenly with melted chocolate.

ok so its not a cookie, its actually pumpkin spice cupcakes. but they are amazing!
dry ingredients (to be mixed separately)
1 1/2 cup flour
1/2 ts baking soda
1/4 ts baking powder
3/4 ts salt
1/2 ts cinnamon
1/4 ts nutmeg

1 1/2 cup sugar
2 eggs
1/2 cup oil
1 cup pumpkin puree
1/3 cup water

mix the dry ingrd. in a separate bowl. In a larger mixing bowl lightly beat the sugar and eggs until completely blended, then add the pumpkin puree, oil, and water and blend completely. Now add the dry ingredients and blend. you can either put this in a cake pan or make cupcakes, bake for 20 minutes (time will be slightly longer for cake). Enjoy! you have to try this recipe!!

Yes, I do. Mi Abelita Loyola taught us. Biscochitos are my favorite cookie, holiday or otherwise. (Para los gringos: Biscochitos are an anise shortbread cookie popular in New Mexico)


Combine:
6 Cups All Purpose Flour
? tsp. Salt
3 tsp. Baking Powder and set aside.

In a Separate bowl cream together:
2 Cups Shortening
1 ? Cups Granulated Sugar
? Cup Packed Brown Sugar

Add:
2 Large Eggs , one at a time
2 tsp. Anise Extract
? tsp Rum Extract
1 Tbs. Water

Add the flour mixture and knead until completely mixed. This dough will be very dry. Turn the dough onto a floured surface and roll to 1 inch thick, cut into shapes and dust with cinnamon sugar. Bake the cookies at 350 degrees for 10-12 minutes
