Lady, my mouth is watering just reading your words. I love spaghetti squash. My favorite way of having it dome is with sauce...spaghetti sauce that is and you have marinara sauce too. I would get creative with the other half and make a cream sauce from half and half heated up in a sauce pan with 1 egg yolk( separated) stir in some of the Parmesan cheese until the mix thickens, but not too much or it will paste up on you. I would saute' the other ingredients and sprinkle them over the sauce after it has been poured over the other squash...then enjoy.
Happy holidays and cooking

Prepare the other half & give it to a friend or neighbor.
none of them...
take the half you have and lay it on his back on a cookie sheet.
then load the middle open section with
maple syrup
a little brown sugar
butter or margerine
bake it until you can stick a fork in it and it is soft.
trust me...it is awesome!!!!
I love spaghetti squash- my favorite way to prepare it is to cook it in the microwave, scoop it out and then add Parmesan cheese, a little olive oil, and some dill weed. Oooo it is so good that way:)
A lady my mom works with makes coconut cream pie substituting squash for coconut. I haven't tried it yet but supposedly it is really good. She just bakes a normal pie crust and they mixes together a box of vanilla pudding prepared for a pie, coconut flavoring, and spaghetti squash chopped up and put in the crust and then tops it with cool whip. It sounds crazy but she loves it and it is a much lighter version if you like coconut cream pie.
Bolognese sauce goes very well served over spaghetti squash, but you could also as use the marinara you have on hand. Alternatively, if you don't want to use beef, make a "turkey bolognese:"
Season and brown some ground turkey thigh. Add the marinara sauce -- tricked out if you wish (e.g., with sauteed mushrooms, roasted garlic) -- heat thoroughly so the turkey picks up the flavors of the sauce, and serve on the spaghetti squash. Pass grated parmiggiano-reggiano to garnish.
Buon appetito!
