Can I get sick if I accidentally eat weavils? Why and how are these things getting into my food..airtight food!

You probably won't get sick, but try to get rid of them because it can become a really serious problem in your kitchen.
Also, before you seal your containers add a bay leaf. Bay leaves are natural insecticides and will prevent a reoccurance of the infestation after you get rid of it.
"BAY LEAF: A fresh leaf bay leaf in each storage container of beans or grains will deter weevils and moths."
It happens. They come in with food from the store. If you ever find them in something you just bought, take it back and get your money back for it, and let them know, because the whole case was probably infested and the store needs to know that to pull the others from the shelf.
I have a bay leaf in everything in my kitchen. :-/ Hope this helps. Also, weevils turn into little moths, so if you see any of them in your kitchen they got to that stage.
Sometimes, weevils lay their eggs in grain and rice products before they are packaged and you can end up with them that way. They won't make you sick but do provide for an interesting form of protein. You will need to clean out your cabinets, vacuun out every last morsel and graiin of food from the floor of the cabinets and then start over. Make sure you empty out the vacuum pr else you will just get reinfested.
Depending on their diet, E. coli infection and other various diseases can be contracted from weevils if ingested.
Weevils are little beetles ... they can be in your food before it was packaged (which seems likely in your case since you have airtight food containers for storage) or got in at the market (bulk food bins are susceptible to infestation this way). Throw out the infested food, take everything out of your cabinets and clean everything really well generally will take care of things. These bugs can make you sick (mostly their byproducts or mold they introduce), but don't freak about it if you ate some of the food before you noticed, especially if you cooked it.
