Gingersnap Cookies
3/4 cup unsalted butter, vegetable shortening, or margarine, room temperature
1 cup firmly-packed brown sugar
1 egg
1/4 cup molasses (regular or unsulphured)*
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
Granulated sugar (for rolling in)
* Lightly grease or spray (non-stick cooking spray) your measuring cup before adding the molasses. This prevents the molasses from sticking to the cup.
In a large bowl, cream butter, brown sugar, egg, and molasses until light and fluffy. Add flour, baking soda, cinnamon, ginger, cloves, and salt; stir or beat until well blended. Cover the dough and refrigerate at least 1 hour or overnight.
Preheat oven to 375 degrees F. Lightly grease cookie sheets.
Shape dough into 1-inch balls. Then roll the balls of dough into the granulated sugar, coating them thoroughly. Place balls, 3 inches apart, onto prepared cookie sheets. Bake 10 to 12 minutes or until light brown (cookies will puff slightly and then collapse slightly, and tops will be covered with little cracks). Remove from oven and cool on wire racks.
Yields 3 dozen cookies.
Dieters Beware Brownies
First Layer:
1 (1-ounce) square unsweetened chocolate
1/4 cup butter
1 egg
1/2 cup sugar
1/4 cup all-purpose flour
1 cups chopped nuts
Preheat oven to 350 degrees. Lightly butter a 9-inch square pan. In the top of a double boiler over hot water, combine chocolate with butter; stir until melted. In a small bowl, beat egg and sugar; slowly beat into chocolate mixture. Stir in flour and nuts. Remove from heat and spread onto bottom or prepared pan.
Bake 20 minutes, remove from oven, and cool on a wire rack.
Second Layer:
1/4 cup butter, room temperature
2 cups powdered sugar
1/2 teaspoon vanilla extract
3 to 4 tablespoons whipping cream
In a medium bowl, cream butter and powdered sugar until light and fluffy. Stir in vanilla extract and enough cream to make mixture spreadable. Spread evenly onto top of first layer.
Third Layer:
1 (1-ounce) square unsweetened chocolate
1/4 cup butter
In the top of a double boiler over hot water, melt chocolate and butter. Remove from heat and drizzle onto top of second layer, tilting pan so that chocolate covers the white cream layer completely and evenly. Refrigerate 30 minutes or until chocolate is hardened. 24 ounces frozen dinner roll dough
1 cup packed brown sugar
1 (3.4 ounce) package instant butterscotch pudding mix
1/4 cup white sugar
2 teaspoons ground cinnamon
1/2 cup chopped walnuts
1/2 cup melted butter
I might even add 1 cup raisins to this.
DIRECTIONS
The night or several hours before, grease and flour a 9 or 10 inch tube pan. Mix brown sugar and pudding mix together. Mix white sugar and cinnamon together. Place frozen dinner rolls in pan a layer at a time. Sprinkle brown sugar and pudding mix over first layer of rolls. Sprinkle sugar and cinnamon mixture over the brown sugar and pudding mixture. Spread half the nuts and melted butter over first layer. Repeat with the next layer.
Place on counter over night. Do not cover. Next morning bake in a preheated 350 degrees F (175 degrees C) oven for 30 minutes. Let stand a few minutes and turn pan over onto serving platter.
Sounds easy enough to try.
Hey, I am really good with cakes pies. If you have an IKEA whereever you live then go there and go to the food section. There will be a box of custard. Then when you go to make it, get flour, eggs, and salt. You can add sugar to the recipe if you want it sweet. Then put the dough in a bowl and put it in the fridge. Wait for 10 to 30 minutes and then take it out and need it until its firm, (not to firm, just like raw cookie dough firm), then roll it out and put it in a pie dish. Put the custard in the pie and then make some more dough (same recipe) to put on as a lid, or top. Bake for 15-30 minutes and take it out and enjoy. By the way you should get a recipe off of www.marthastewart.com have a happy holiday!
