I want to make a grainy sorbet. How do you keep it from becoming creamy? Is there a special machine?!
Answers: Don't use an ice cream machine. Freeze your mixture in a bowl or pan and use a fork to break up the crystals. You will need to do this a few times with re-freezing inbetween.
Mark is right.Keep popping it out of the freezer, lift the sorbet from the sides of the container and flick it with the fork to make nice rocky crystals form.
