Vegetable Soup.
1kg Brisket Bones.
3 Celery stems diced.
3 Medium carrots diced.
1 Large onion diced.
1 Packet soup mix (split peas etc).
Additional vegetables

In a 10l stock pot brown the Brisket Bones in 2t cooking oil, turning often.
When thoroughly brown, remove and pour off fat,
Add 2t cooking oil and add onion, celery and carrot and sauté for several minutes, stirring from time to time.
Add a jug of boiling water and the soup mix and stir
Add Brisket bones and more hot water and bring to a boil.
Reduce heat to a gentle simmer and leave for 90 minutes stirring from time to time.
After an hour remove the bones and set aside to cool.
Skim off any fat on the surface and add more vegetables. Peas, beans, corn etc. (pasta spirals, elbow bow ties etc could be added, at this stage.
Season to taste with S & P etc and bring back up to heat.
Remove the meat from the bones, cut into bites sized pieces and return to pot.

What kinda soup? Basic Tomato soup is 1 can of tomatos, 1 onion, 1 clove of garlic and salt and pepper to taste. Saute onion and crushed garlic gently until translucent, add yor tomatoes and cook for a further 10 -15 minutes and season to taste. You can apply this method for almost any kind of soup. You can also add a tbsp of cream to enrich it a little bit and its always good to experiment. Have fun

Broccoli Cheese Soup (Using Soup or Sauce Mix):

Mix:
1/4 cup non-fat powdered milk
1/8 cup cornstarch
1/16 cup instant chicken bouillon
1/4 tablespoon dried onion flakes
1/4 teaspoon italian seasoning

To make soup:
1 1/4 cups cold water
1/3 cup fresh broccoli or frozen broccoli
1 cup cheese, grated

Directions:
1.Combine mix ingredients and measure out 1/3 cup.

2. Mix 1/3 cup mix with cold water. Add broccoli.

3.Cook and stir on stove top or in microwave until thickened.

4.Add grated cheese and mix until well blended.

Ingredients:
8 cups broth
4-5 cups cooked vegetables (carrots, beans, mushrooms, peppers sauteed onions garlic, cron or some grains combo like coked rice)
8 ounces chopped cooked turkey (chicken, even hot dogs... its all been done here!, optional, optional, optional, optional) (optional) or cooked pork (even hot dogs... its all been done here!, optional, optional, optional, optional) (optional) or cooked beef (even hot dogs... its all been done here!, optional, optional) (optional) or cooked fish (even hot dogs... its all been done here!) (optional)
4 cups chopped spinach (optional) or cabbage (optional) or kale, etc (optional)
diced canned tomatoes (optional)
seasoning (to taste, ranch dressing mix, taco seasoning mix) (optional)

To make a thick soup:
cornstarch (optional)
water (opttional)

What makes it yummier:
grated cheese
fresh herbs
bacon bits
toasted bread cubes
tortilla chips
salsa
sour cream
croutons
cheese, crisps

Directions:
1.In a pot, bring the broth to a simmer.

2.Add the additional all add ins and heat until as hot as desired.

3.If you want a thick soup dissolve corn starch in a bit of water to make a slurry then slowy add to finished soup on the stove and heat until thickened to your liking.

4.Garnish each serving with the yummies!

Tip for Vegetarian: You must omit the chicken, pork, beef, fish, or even shellfish. The broth must also be Vegetable. Do not include the Bacon bits unless they are soy also.

Simple Lentil Soup:

35 min 10 min prep
6 servings

1 teaspoon olive oil
1 onion, chopped
2 garlic cloves, chopped
1 cup lentils
2 big carrots, diced
2 bay leaves
2 bouillon cubes
2 links pre- cooked italian sausage, sliced
1 teaspoon dried oregano
2 teaspoons dried thyme
2 teaspoons dried rosemary

In the pot that will eventually hold the soup, saute the onion and garlic in the oil.
Add the lentils, carrots, bay leaves, bouillon, and enough water to make the volume of soup that you want. (Remember that the lentils will expand when they cook.).
Cover and bring to a boil. Once it's boiling, turn the heat to low and let simmer for 15-20 minutes, until the lentils are basically done.
Add the sausage (I use chicken sausage) and the rest of the herbs, return to a simmer, and cook for about 3 more minutes.
Enjoy!

1. soup #1: one can of tuna fish, and any vegetables which would go into the pan :)))
2. soup #2: sauteed onions (1), carrots (2-3), mushrooms (as many as you can get :))), - add to boiled potatoes (1-2)
3. soup #3: chicken soup - add sauteed carrots to chicken broth, and then some noodles.
And I add cauliflower and broccoli wherever I can :)))
WARNING: tuna fish goes into the soup without the can, and any soup should have some salt in it :)

The least expensive soup is a bean soup.
Get one of those dried bean soup mixes, some onion, celery, carrots, potato,salt and pepper and you got yourself a soup.
If you can swing it ad ham, bacon or chicken.

I have never yet used a recipe for soup! It all comes out of my imagination. For chicken & veg soup,I use as much diced vegetable as the family requires, chicken wings, sliced breast meat,chicken stock cubes and several large potatoes, 1 onion.Throw all into big boiler pot and cook till tender. I remove the meat & mash the vegies. This makes a nice thick tasty soup. The same for beef soup.

I make this frequently when the weather's cool. It's fast, easy and my hubby and son love it.


TORTELLINI SOUP

5 cups chicken or vegetable broth
1 pkg. frozen vegetables, any variety (i.e., mexican style, italian style, oriental stir fry, etc.)
1 pkg. frozen spinach OR 3 cups torn fresh spinach
1 package (9 ounces) refrigerated cheese tortellini


In a large saucepan, combine the broth and frozen vegetables. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes. Stir in spinach and tortellini. Cover and cook for 5 minutes or until tortellini is tender and heated through.
