Whats the best way to make chicken and garlic pate?!


Question: Title: Chicken Liver Pate

Yield: 1 Servings

1/2 lb Chicken livers; cleaned and
.. chopped
1/2 c Butter
1 Onion; chopped
1 Or 2 cloves garlic; chopped
1 Bay leaf
1 tb To 2 sherry

Simmer all ingredients, except sherry, for an hour
over low heat, covered. Discard bay leaf; process
until smooth. Stir in sherry. Chill.

Makes 1 cup.

IN THE MICROWAVE

pate is a moussoline forcemeat that is baked in a tureen

you need to make a seasoned garlic and raw chicken paste and then place it in the tureen and bake it

you can find excellent pate recipes in older cook books - the newer ones don't really have the old world recipes

if your looking for more of a spread like pate take poached chicken and Sauteed ( not toasted ) garlic and puree with other flavoring ingredients untill smooth you may need to add a liquid binder to make smooth like a bit of sour cream, cream cheese, chicken stock etc.

use chicken livers. fry them, grind them up in a pestle and mortar, add garlic, lemon juice, salt, tomato puree, put bay leaves on top, bake in oven about half an hour, let it cool
