I am considering buying salt cod, is it worth it?!
Answers: i love cod, but have never had this type
There are many different dishes you can make with bacala, and I won't confuse you with yet another recipe that you won't use. When your ready google "salt cod recipes".
The most important bit of information I can give you is not the recipe, but how to prepare it for the dish you'll make. Bacala, or bacalo, or salt cod, or stuk fish must be soaked for a least 24 hours in cold water, with 2 or 3 water changes during that time. My grandmother simmered the fish in water, or milk, and sometimes buttermilk, for an hour or so before she made her dish. The important thing with bacala is to get the salt out of it, and after that peel off the little patches skin that may or may not be on the fish. Not only does the soaking process get rid of the salt, but it also takes away the concentrated fishy taste from drying (that's why grandma sometimes used buttermilk.)
Bacala is delicious, but unfortunately there are few people who remember how to prepare this fish properly.
Sure, you can get it at an Italian deli. Just remember to soak it in plenty of water at least 3 times to get rid of all the salt. There are a number of traditional Italian dishes made specifically with bacala.
