Thanksgiving mashed potatoes still good?!


Question: We still have some mashed potatoes left over from Thanksgiving. Would they still be okay to make some baked mashed potatoes. I usually do this one or two nights later, but its been 4 days.

Food can be stored in the refrigerator for up to 7 days before it would be unsafe to eat.

you should be okay unless you put milk in them and then it could be a little iffy but since they have been in the fridge, they should be okay. As long as there is no green stuff growing on them you should be okay. I would make them as quick as possible though just to be on the safe side. Just do the sniff test...if they smell funky then you will know if they have spoiled or not.

Generally, the answer would be "yes". However, there are many variables to consider.

If you're dealing with plain, cooked potatoes---no milk, cream, butter or other ingredients added (other than salt, pepper and herbs)---they should be fine after 4 or 5 days, assuming they have been tightly covered and refrigerated. If they have not been in an airtight container or plastic bag, they will probably still be safe to eat, HOWEVER they will most likely have dried out. They may also have picked up undesirable flavors/odors from the fridge.

If you added milk, cream or butter when you first prepared them, I wouldn't suggest using them. Dairy products are sources of protein, and pathogens (bacteria) that may make you ill thrive on proteins. Even in refrigerator temperatures, they can still reproduce.
