Gnocci anyone?!

After boiling the gnocchi, I brown them in a saute pan. Then toss with a simple pesto. Browning really improves the texture of the gnocchi.

I cheat and get them either boxed or frozen and just follow the directions on the package. Heh. I do like tossing them with pesto and topping them with Parm, asiago, and Romano, and some fresh pepper. It's far from traditional, but it's darned good.

It's all in the sauce, in my famila it takes all morning to make Gnocchi, practice on the dough recipe after that's accomplished concentrate on a good creamy cheesy wine sauce 2 of any of these three combos will do. Gnocchi is great cause the love and time it takes to make it, a good sauce helps

In my opinion, gnocchi is not a recipe but a skill. My advice is find some nice Italian woman who really knows her stuff and get her to teach you.

Potatoes, flour, salt and one egg. I roll into tubes then cut into pieces with a pastry cutter. I boil them then pan fry and add sauce and fry some more- absolutely awesome!
