I got a can of wahoo fish as a present. How does one cook it?!


Question: WAHOO ITALIANO

2 lb. Wahoo (or any non oily white fish)
2 lb. white potatoes (1/2 inch sliced and parboiled/half cooked)
butter
Bread crumbs
Garlic powder
Oregano
Salt
Olive oil

Cut fish approximately 1/2 inch thick by 1 1/2 inch or 2 inch pieces. Spread out on a cookie sheet leaving approximately 2 inches between pieces. Place a small pad of butter on each piece. Bake 20 minutes in a 325 degree oven.

Remove cookie sheet from the oven and place 1/2 inch thick slices of the parboiled potatoes between the pieces of fish. Sprinkle bread crumbs over the fish and potatoes until they are lightly covered. Season the entire tray with a dusting of salt, garlic powder and ground oregano.

Sprinkle a light coating of olive oil over the entire tray; return tray to a 350 degree oven and bake for 25 minutes or until bread crumbs are browned. Remove from oven and place on a serving platter. Serve immediately. Serves 4.


BERMUDIAN WAHOO CASSEROLE

1 1/2 lbs. wahoo meat
1 1/2 c. thick white sauce
1/4 lb. grated cheese, mild or sharp, to taste
2/3 can (approx 20 oz.) 28 oz. diced tomatoes
10 green olives, pimiento stuffed, cut in half
1/3 med. green pepper, in sm. pieces
1/2 onion, diced in sm. pieces
1 cup bread crumbs (4 oz.)
1/2 cup parmesan cheese or to taste
(1/2 pkg.) cooked egg noodles broad variety
3 tsp. outerbridges sherry peppers or to taste
2 pinches sea salt or to taste
optional add peas

Boil or steam fish until flaky, then drain. Make a thick white sauce, then add cheese and diced tomatoes. Add fish, olives, green pepper and onions, sherry peppers and spices to taste, mixing all ingredients thoroughly. Prepare casserole dish, butter bottom and spread bread crumbs. Put fish mixture in casserole dish. Cover the casserole and bake at 350 degrees for 1/2 hour.

In the meantime cook noodles per package direction. Remove casserole from oven, remove cover, spread cooked noodles on top, sprinkle with Parmesan cheese and continue to bake uncovered at 350 degrees for another 15 minutes.

Serves 4-6

Perhaps you should ask your thoughtful gift giver..

i had trouble finding recipes for this type of fish. perhaps the label on the can gives a website or idea?

I would make wahoo patties. Here are some recipes for salmon. Just substitute the wahoo for the salmon:

Wahoo is a type of mackeral.

According to Wikipedia:

The flesh of the Wahoo is delicate and white and regarded as very good in quality. This has created some demand for the wahoo as a premium priced commercial food fish. However, because of its solitary lifestyle, it is taken commercially only as a bycatch in the long-line fishery for Tuna and Dolphin. Wherever found, it is a prized sport fishing catch. Not always catchable, but otherwise it can be very delicious

It sounds to me like you would cook it as you would any firm-fleshed fish.

You could grill it, for instance.
