Good Glazing Sauces...?!
Answers: I would really like to bake some chicken wings for dinner but I do not know of a good glazing sauce for after they are done. It can't be hot because my kids won't eat them. Any one know of a good sauce I can buy or make to give a good coat that is not spicy? Something outside the bbq sauce 'box'.
Mix some soy sauce with honey.
Honey mustard
Sweet and Sour
Fig glaze
Orange glaze
Pineapple glaze
Almost anything can be made into a glaze. Pick a flavor your children like and just go for it. I will be happy to provide you a recipe for any flavor glaze you decide on. They are simple to make. Just email me and let me know. I do not want to post a bunch of recipes for no purpose. Just think outside the 'box'.
Orange-Chipotle Glaze:
1 cup orange juice
2 cups cider vinegar
1 (7-ounce can) chipotle peppers in adobo sauce, pureed in the blender or finely chopped
1 cup soy sauce
8 cups sugar
In a heavy 3-gallon non-reactive stockpot, reduce the orange juice to 1/4 cup. Add the remaining ingredients and cook over medium-high heat until the sugar has melted and the sauce has reduced to 4 cups and coats the back of a spoon, about 20 to 30 minutes.
Note: Be sure to use a large pot as specified, and also watch carefully while reducing the glaze ? it has a tendency to overboil!
Melted apricot jam is always good, once they're about 90% cooked. So is Hoisin Sauce.
Korean Sesame Chicken Wings
1? lbs. chicken wings, cut in half and tips removed
2 Tbsp. all purpose flour
1/4 cup cornstarch
3/4 tsp salt, optional
2 Tbsp. sugar
1? tsp sesame seeds, toasted
1 clove garlic, minced
1 scallion, chopped
1 egg, beaten
2 Tbsp. soy sauce
? cup peanut oil, for frying
Wash chicken wings and pat dry. Mix remaining ingredients, except oil in a bowl. Add chicken, turn to coat, cover and marinate wings in refrigerator 3 hours or overnight. Remove wings, pat dry and discard marinade. Deep fry about 4 minutes until golden brown. Drain on paper towels.
combine some honey or corn syrup with any jelly or jam you have on hand....apricot or pineapple would be excellent with a touch of soy sauce.
What about Teriyaki? Its really easy, comes pre-made, and kids love it.
I like to use teriyaki glaze. There are some good garlic glazes, as well.
Sweet and Tangy BBQ Sauce
Ingredients-
2 tablespoons butter
1 small onion, minced
2 cups ketchup
1/2 cup cider vinegar
1/4 cup water
1/4 cup apple juice
1/4 cup Worcestershire sauce
2 tablespoons brown sugar
2 tablespoons molasses
2 tablespoons honey
2 teaspoons dry mustard powder
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon ground cayenne pepper
Preparation-
Melt the butter in saucepan over medium heat. Stir in the onion, and cook until tender. Mix in ketchup, cider vinegar, water, apple juice, Worcestershire sauce, brown sugar, molasses, honey, mustard powder, chili powder, garlic powder, and cayenne pepper. Bring to a boil. Reduce heat to low, and simmer 30 minutes, stirring occasionally.
