Why doesn't my pecan pie get done in the center?!
Answers: When I bake it the required amount of time, it isn't nearly done in the middle. By the time it finally sets up, it has taken twice as long and the pecans on top and the crust are too done.
When you're troubleshooting sometimes it's just best go back to the basics of cooking and work your way outward from there
The recipe :
Have you tried and been successful with this recipe before? Do you know and trust the recipe's author ? The reality is that here are a lot of really bad recipes out there and until you know who the good guys are all recipe's should be approached with more than a little skepticism
Your oven:
Are you verifying the temp settings with an oven thermometer that is placed in the oven ? Are you doing your baking at the vertical and horizontal center of the oven ?
The equipment :
Baking times and temperatures will be very different between a Pyrex pie plate and a metal pie plate
When to remove
When you take your pie out of the oven it should be slightly jiggly and about the viscosity of sour cream
did u convection bake it?

Apparently it just looks uncooked in the center but it actually is- take it out and cool it thoroughly and it should set.
Otherwise, lower the temp in the oven so you get a more even cooking accross the whole pie.
u may have the temperature of the oven to high,try turning it down and cooking for a little bit longer
this could be because your baking in a cookie sheet or some other, try placing it directly on the center rack, same as cooking a pizza
I see your name is mountain girl. You may need to adjust your time/temperature to your altitude. Also, make sure that you are preheating your oven long enough.

you're not spposed to cook it till it's 100% done - it'll set overnight as it cools
