These soft pretzels do not require yeast, just baking powder. They are a great snack. You can probably get away with omitting the cheese, for a plain pretzel.

Soft Cheddar Pretzels

INGREDIENTS:

* 1 1/2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 teaspoon sugar
* 2 tablespoons margarine
* 1/2 cup (2 ounces) shredded mild Cheddar cheese
* 2/3 cup milk
* 1 egg, beaten
* 1 1/2 teaspoons coarse salt

PREPARATION:
Combine first 4 ingredients in a medium bowl; cut in margarine with a pastry blender until mixture resembles coarse meal. Add cheese and milk, stirring until dry ingredients are just moistened. Turn dough out onto a lightly floured surface and knead about 12 times.

Divide dough in half and roll each half into a 12x8-inch rectangle.

Cut dough lengthwise into eight 1-inch strips. Twist each into a pretzel shape; brush with beaten egg and sprinkle with coarse salt. Place on lightly greased baking sheets and bake at 400° for 15 minutes or until golden brown. Cool pretzels for a few minutes on wire racks; serve pretzels warm.
Makes about 16 soft pretzels.

You can't make yeast. It is a living organism. You can buy it at any supermarket. Yes, you will need it for soft pretzels.

you can't make yeast. you can purchase it but you cannot buy it. it is a living organism that consumes glucose and releases alcohol.

OK so you can't "make" yeast per se, but you can certainly harness it for your uses. Outside, in the air we breath there is millions of spores of wild yeast, this is how the first bread was made. Put your batter outside for a while, and it will rise!

"Catching the Wild Yeast
Hundreds of years ago, before there was packaged yeast, bakers used sourdough starter to keep a supply of yeast alive and handy. They kept a pot of live culture in a flour/water medium, and "fed" it daily or weekly so that the yeast remained alive and active. To understand how sourdough starter works, let's look at how you can create a batch of starter using live yeast that is floating in the air!"

You don't make yeast - wild yeast - but you can grow it. It is all around us in the air. That is what sourdough starter is. It has other names, too but basically it is a mixture of flour and water that you set out and allow the wild yeast to accumulate. Then you "feed" it a little more flour and water. If you leave it go for a few days it actually ferments and give off a liquid called "hooch." As you feed the yeast you pinch off some of it and disgard it or give it away. Otherwise it would become too big.

Once you have your starter you can use it to make bread. The process of making bread from a starter made with natural wild yeast takes at least five days.
