1-16 oz. pkg. frozen cheese tortellini
1-2 tomatoes, cut into medium size chunks
1 onion, cut into wedges
1-2 medium zucchini, sliced thickly then cut in half to make half-circles
approx. 1/3 cup olive oil
parmesan cheese
Cook and drain tortellini according to package directions. Heat olive oil in a large skillet then sautee onion and zucchini until onion begins to become transparent and zucchini becomes tender. Add tomatoe (s) and heat through for approx. 2 minutes. In large serving dish combine tortellini with vegetables and sprinkle with parmesan cheese.

Tortellini Salad
Serving Size : 6
1 (7-ounce) package cheese tortellini
1 cup broccoli florets, cooked
1/2 cup chopped fresh parsley
1 (6-ounce) jar marinated artichokes, drained
2 green onions, chopped
1/2 cup Italian salad dressing
1 tablespoon chopped fresh basil
3 tablespoons grated Parmesan cheese
6 cherry tomatoes, halved
Cook tortellini according to package directions; drain. Rinse and drain again.
Combine tortellini with broccoli, parsley, artichokes and green onions in a large bowl; toss lightly to mix. Pour salad dressing over tortellini mixture; sprinkle with basil and toss gently. Cover; chill until ready to serve.
Toss salad again just before serving. Sprinkle with Parmesan. Arrange cherry tomatoes on top. Serve with breadsticks.
Tortellini Stir Fry
1 package (9 ounces) refrigerated three cheese or your favorite tortellini, prepared according to package directions
1 tablespoon vegetable oil
1 package (16 ounces) loose-pack frozen stir-fry vegetables
1/3 cup prepared peanut- or garlic-flavored stir-fry sauce
2 tablespoons water
1/8 teaspoon crushed red pepper (optional)
2 tablespoons chopped unsalted cashews or peanuts
Heat oil in large, nonstick skillet over medium-high heat. Add vegetables; cook, stirring occasionally, for 7 to 8 minutes or until crisp-tender.
Stir in pasta, stir-fry sauce, water and crushed red pepper; cook for 1 to 2 minutes or until mixture is heated through. Sprinkle with nuts just before serving.
