I have a freezer-full of chicken breast (reason below) and I'm running out of meal ideas! Any suggestions?!

Lucky you, what a great brother. My absolute favorite dinner to make is chicken crepes. Sooo good.

Try Adobo.
Boil the chicken for about 10 min. and then remove the fat.
Then, put some garlic, salt, soy sauce, pepper, 1 1/2 cup of water and let it boil for another 10 min. Put some olive oil (1 tspn.) and serve.

Chicken stir fry! Veggies with some BBQ sauce and a little bit of vinegar and cook in a pan. Or some sweet and sour sauce with sliced chicken pieces. Then to make it look fancy top with some chopped almonds and maybe some honey glazed thin slices of apple.
I love stir fry!

Honey and mustard? It's really good. You can also try indian recipes, they mix chicken with yogourt and intriging spices, I really like it!

i love putting chicken and veggies (potatoes, carrots, peppers etc) with some spices (if you have fresh cilantro add some leaves too) to cook in the oven with either orange or mango juice. serve that on a bed of rice and mmmm! eheh hope this helps

Hehe, that reminds me of Bubba Gump. How about chicken noodle soup, chicken in white wine sauce, chicken gumbo, friend chicken, chicken with cream of chicken, chicken nuggets, and chicken potpie.

You could make chicken and rice with cheese or with cream of chicken. You can also make chicken with bacon and cheese on it for a sandwich. There is also chicken tacos and chicken fettachini

Ashley's Chicken Katsu with Tonkatsu Sauce

Cook Time: 10 Minutes
Ready In: 30 Minutes
Yields: 2 servings

"Panko (Japanese bread crumbs) crusted fried chicken breasts with a sweet Tonkatsu dipping sauce. Serve with your choice of steamed white rice, shredded cabbage, or even mashed potatoes."

INGREDIENTS:

Sauce
1/2 cup Worcestershire sauce
1/4 cup ketchup
2 tablespoons soy sauce
pepper to taste

Chicken
2 cups vegetable oil, for deep-
fat frying 1/2 cup all-purpose flour
1/2 cup panko bread crumbs
salt and pepper to taste
1 egg, beaten
2 skinless, boneless chicken
breast halves - pounded to 1/4
inch thickness
1 green onion, thinly sliced

DIRECTIONS:

1. For the sauce, stir together the Worcestershire sauce, ketchup, and soy sauce, and a pinch of pepper to taste. Set aside.

2. Heat oil in deep-fryer to 350 degrees F (175 degrees C).

3. Place flour and panko bread crumbs onto separate plates and season with salt and pepper. Place the beaten egg in a medium bowl. Dip flattened chicken pieces first into flour, then egg, and lastly bread crumbs.

4. Fry breaded chicken breasts in preheated oil until golden brown and no longer pink in center, about 8 minutes. Transfer to a paper towel-lined plate to absorb excess oil. Slice chicken into thin strips and top with a drizzle of sauce and a sprinkling of sliced green onions. Serve remaining sauce on the side for dipping.

This is my Mom's recipe. I posted it on RecipeZaar, but it is our own :-)

Old Fashioned Chicken Pot Pie

Filling
2 1/2-3 lbs chicken, cooked and removed from bone or 3-4 cups cooked chicken or cooked turkey, leftovers
2 cups chicken broth or turkey broth
1 (10 1/2 ounce) can cream of celery soup
1 1/2 cups of sliced frozen carrots
1 1/2 cups frozen sweet peas
Crust
1/2 cup lightly-salted butter
1/2 teaspoon pepper
1 cup self-rising flour
1 cup buttermilk or whole milk (buttermilk recommended)
1/2 teaspoon salt




1. Preheat your oven to 425 degrees F.
2. For the filling: Cook the chicken and remove the meat from bones, or measure out the precooked chicken or turkey.
3. Place the meat, the carrots and the peas in a buttered 9-inch by 13-inch pan.
4. Mix the broth with the soup and bring to a boil.
5. Pour the hot liquid over the meat.
6. For the crust: Mix all ingredients until smooth, pour over the chicken and spread until the crust is about 1 inch from the sides of the pan.
7. Bake the pie in the oven for 35-45 minutes, until crust is nicely browned.

Chicken fingers, grilled chicken (that you can use in a salad the next day. Chicken lasagna, fried chicken, chicken and vegetable stir fry, chicken pot pie. . .

*chicken and broccoli alredo... they even sell the jarred alfredo sauce.... Or you could make a big thing of chicken soup and freeze it in individual bags so that if you ever want some, you have individual servings ready....or you can make what I call Chicken Adobo which is cut the chicken in pieces and sear it in olive oil with some bay leaves in it, then take and add 1 part soy sauce 1 part white vinegar and some garlic and cook to a boil and if you want chicken really tender you can put it in the oven for a while... its got a nice tangy taste to it... Oh.... and I usually serve it over yellow rice, but any rice is good!*

Stir fry, dice them up and cook with your favorite sauce and veggies, serve over rice.

How about chicken cordon blue? I might have misspelled that. Easy, cut the chicken breast/thigh thin, and bash it out flat. Put ham (or Canadian bacon), or rice, and cheese (your choice). Roll up the chicken like a taco. Wrap a couple of strips of bacon around it to stop it from coming undone. Coat the outside with real maple syrup, and spring with a little black pepper. Spicy chicken, buffalo chicken, Pizza. Make your own pizza and dip pieces of grilled or baked chicken in buffalo, hot, or BBQ sauce.

Grilled chicken salad - (lettuce, etc. and olives, tomatoes, cheese, croutons, lemon/lime juice, pepper and salt, peppers, etc. and add grilled chicken slices)

Chicken wrap- tortilla, ranch dressing, lettuce, tomatoes

pound chicken breasts with a mallot - sprinkle seasoning (any kind you like) put a layer of cream cheese on the chicken - roll it up and wrap with a piece of bacon. These are delicious and easy to make. Let me know if you try it. Thanks.

If you have company, you can make Buffalo Chicken Dip as an appetizer:

Prep Time: 10 min Total Time: 15 min Makes: About 2-1/2 cups or 40 servings, 2 Tbsp. each 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed 1-1/2 cups finely chopped cooked chicken 1/2 cup KRAFT ROKA Blue Cheese Dressing 1/2 cup Buffalo wing sauce 2 stalks celery, finely chopped MIX all ingredients in medium microwaveable bowl.

MICROWAVE on HIGH 5 min. or until cream cheese is melted and mixture is heated through, stirring after 3 min.

SERVE hot with WHEAT THINS Crackers or celery sticks.

this one is simple

take a package of lipton french onion soup mix [dry]
a package of brown gravy sauce mix
and a quart of heavy whipping cream
season chicken with salt and pepper

and then mix the three ingredients and pour over seasoned chicken;
place in ovensafe glassware or corningware or something oven safe [greased]
place in preheated oven of 400
for 45 minutes
serve with rice or frenchfriesss

Chicken can last 6 months.. get some hamburgers for awhile and redo what you did in a month or two.. you will go crazy if you all that chicken in a month or two.
btw you haven't made any CHICKEN SOUP yet!! just cook the chicken in water which will make yummy broth add vegetables of your choice.. and remember at least 2 lemons squeezed into the pot to keep the grease away!!
