Does anyone know a good recipe for cooking tilapia?!
Answers: I went to an arican/ caribbean resturant once and had an amazing tilapia dish, but cant remeber what it was-lol. Does anyone have any good suggestions for cooking this fish?
Marinated Grilled Tilapia
4 Tilapia fillets
MARINADE
? c. olive oil
? lemon, juiced
1 Tbls. oregano
? tsp. black pepper
? c. red wine/balsamic vinegar
? c. finely chopped parsley
2 cloves garlic, minced
2 dashes Tabasco
Combine all ingredients, except fillets, in a large jar and shake well. Marinate fish in the marinade for 30 minutes. Remove fillets from marinade. Place fillets on hot grill elevated above coals. Cook 2-3 minutes per side. Makes 4 servings.
SHORT CUT: Use your favorite Italian dressing or barbecue sauce in place of the marinade recipe.
My husband always grills talapia. He seasons it with garlic salt and pepper and some lemon juice. Then throws it on the grill

Baked Tilapia with White Wine & Herbs
2 fresh Tilapia fillets, approximately 8-10oz each
150ml (1/4pint) medium white wine
1-2 cloves garlic, finely chopped
4 tablespoons freshly chopped mixed herbs
6 salad onions, diagonally sliced
salt and freshly ground black pepper
1/2oz butter
1 teaspoon cornflour, blended with a little cold water
2 tablespoons sour cream
Arrange the Tilapia side by side in a lightly oiled roasting tin or ovenproof dish.
Pour over the wine, then sprinkle over the chopped garlic, most of the herbs, the salad onions and seasoning to taste. Place half the butter on each fish.
Cover with a sheet of lightly oiled foil, seal in the fish then bake in a preheated oven 350F, for 30-35 minutes.
Transfer the Tilapia to a serving dish and keep warm. Pour the juices into a pan, stir in the blended cornflour and simmer for 2 minutes. Stir in the sour cream, pour over and serve immediately, sprinkled with the remaining herbs. Cooking Time: Approximately 35 minutes Serves: 2
Tilapia Lemon Parmesan
2-1/2 lbs. Tilapia fillets
2-4 tsp. butter or margarine, softened
2 tsp. fresh lemon juice
Lemon-Parmesan Sauce
1 cup mayonnaise
2 tbl. fresh lemon juice
1/2 cup grated Parmesan cheese
Garnish
2 lemons, sliced fresh parsley
Rinse the tilapia fillets in cold water and drain thoroughly.
Top with butter or margarine and lemon juice.
Broil about 4 inches from the source of heat for approximately 5 to 6 minutes or until the fish is opaque and flakes easily when tested with a fork.
Top each portion with 1-2 tbl. of Lemon-Parmesan Sauce; broil 2-3 minutes or until sauce puffs and turns golden brown.
Place fillets on serving plate; garnish with lemon slices and fresh parsley.
Serves: 6
Baked Tilapia with Tomatoes & Olives
6 Tilapia fillets
1/4 cup extra-virgin olive oil
4 sprigs of fresh thyme
3 tomatoes, peeled, seeded and chopped
1/2 cup coarsely chopped green olives
1/4 tsp. dried hot red pepper flakes
2 garlic cloves, minced
1/2 cup finely chopped red onion
1 T. fresh lime juice
Preheat the oven to 400 degrees.
Lightly oil a shallow baking dish large enough to hold the fillets in one layer.
In a bowl stir together the oil, the thyme, the tomatoes, the olives, the red pepper flakes, the garlic, the onion, and the lime juice.
In the prepared baking dish arrange the fillets, skin sides down, season them with salt, and spoon the tomato mixture over them.
Bake the fish, uncovered, in the middle of the oven 15 to 20 minutes, or until it just flakes.
Serves: 6

Place your filets into a glass dish. Pour a jar of your favorite alfredo sauce over and top with an Italian breadcrumb and parmesan cheese mix. Bake for 15 minutes and serve over a bed of pasta.
Veggie side suggestions

Do not be grossed out until you have tried this!!!! It is amazing, but sounds a little odd....
Cook the tilapia light oil, tomato, basil seasoning by Mrs. Dash, lots of lemon and seasoning salt make sure to put these on both sides of the fish. while the fish is cooking, scrambled some eggs and cook them in a pan omelet style, (like a pancake). Then mix together 4 oz. of cream cheese, 1/2 a tablespoon Italian seasoning and 1/2 a tablespoon garlic powder.
When the fish is done, place the eggs on a plate, place some provolone cheese on half of the eggs and the tilapia on top of the cheese. Then spread the cream cheese mixture over the fish and fold the eggs over like an omelet or taco. It sounds strange, but it really is good!! You could try adding some cilantro, or some diced tomatoes, or maybe even some garlic!!. Let me know what you think!!
Dice up mango, red peppers - add apricot fruit spread. Salt and pepper the tilapia, put in foil with your mango mix and grill or bake for 7-10 minutes

Tilapia with Garlic Butter (Serves 2)
Ingredients
2 tablespoons butter
2 cloves garlic, finely minced
dash pepper
dash salt
pinch dried dill weed or parsley
dash paprika
4 tilapia fillets
Directions
In saucepan, combine butter, garlic, pepper, salt, dill weed, and paprika. Heat over low heat until butter is melted and starts simmering. Remove from heat. Brush a little of the butter mixture in the bottom of a shallow baking dish, line baking dish with foil, if desired, then place tilapia fillets on the buttered area. Brush top of each tilapia fillet with the seasoned butter mixture. Bake at 350° for 12 to 15 minutes, until the fish flakes easily with a fork.

For the peppers
1 orange bell pepper, thinly sliced

1/2 cup fat free sour cream

For the fish:.
Put the flour, the salt and pepper, and garlic powder in a bowl and stir to mix.
Beat the egg in a bowl.
Dip each fillet in the FLOUR first to coat, and then the egg. (Note, the egg will slip off the flour a bit, so just turn it a couple times until the egg adheres - then add to the pan).
Add the cooking spray and the butter to a large skillet and heat until bubbly.
Add the fish to the hot pan and turn the heat to med-high. Cook for about 3 minutes, and turn when it is brown. You really have to watch the fish so it doesn't burn -- Cook another 3 minutes on the other side, until browned (add a little more butter if you need to). When browned remove and keep fish warm.
For the peppers & onions:.
Coat another large skillet with cooking spray, and heat until hot. Add the sliced onions and peppers and saute until a litte browned and soft. (Add a little water if you need to, and turn down the heat if they are browning too quickly).
Add the capers and stir to mix and heat through.
Add the white wine and cook for about 2 minutes unitl it is reduced a little. Add the sour cream and the parmesan cheese. Cook until bubbling and the cheese is melted. Grind some freshly ground black pepper over the top.
Delicious served over spaghetti squash and with a garnish of fresh parsley.
place the fish in foil with a small amount of butter, some fresh chopped corriander and a good dash of lime or lemon juice. Season with black pepper and wrap the foil into a parcel. Cook at 180 degrees for about 20 mins. Serve with basmati rice and a nice tossed salad.
