Anyone have a simple recipe for a cake, or cupcakes?!


Question: My gfs b-day was today and i got her a present but i also wanted to bake her a cake or cupcakes that i can give her. All i need is a simple recipe

Best way is to buy a box mix, but if you want to make it from "scratch" here's a great recipe.

Vanilla Cake
1/2 cup shortening
1 cup sugar
2 eggs
2 cups flour
1 cup milk
3 teaspoons baking powder
1 tablespoon vanilla
1 cup nuts, ground (optional)
Cream shortening and sugar, add eggs and beat. Add flour, milk and baking powder. Add vanilla and nuts. Place in greased and floured pan. Bake at 350 degrees until top of cake springs back when touched (about 30 minutes).

Buttercream Frosting
6 tablespoons butter, softened (no substitutions)
3 tablespoons whipping cream, unwhipped (35%)
1 teaspoon vanilla
3 cups confectioners' sugar
food coloring (optional)
In a bowl, beat together the butter, whipping cream and vanilla until smooth (about 3 minutes). Add in confectioners sugar; beat very well until smooth, adding more if necessary to achieve desired consistency.
Note: In order for the icing to have a creamy texture, only whipping cream must be used.

go to the store and buy a box mix- it can't be any easier than that!

Betty Crocker. All you need to add is eggs, a bit of water and a bit of oil. And the icing comes in nice little plastic tubs. Those little paper cupcake cups would be a nice touch and would save on clean-up.

get the betty crocker cake mix and all the instructions are on the back :D

get the betty Crocker French Vanilla box mix and some strawberry jam, jelly, preserves...
mix the batter as directed, fill cupcake cups about 1/2 way full, put a spoonful of strawberry jam in the middle of the cupcake, then put some more batter over top of it to basically cover up the jam....bake as directed.
then i would frost it with some cream cheese frosting.

FAIRY CAKES

2/3 c. all-purpose flour
1 tsp. baking powder
3 eggs
2/3 c. granulated sugar
2 tbsp. butter, melted
1 tbsp. hot water

Filling:

1 c. heavy whipping cream
1/4 c. granulated sugar
1/2 tsp. vanilla extract
Food coloring, as needed

To make the cakes, heat oven to 425 F. Grease and flour 2 muffin tins (to make 24 cakes). Set aside. Sift together flour and baking powder; set aside. Place eggs and sugar in a bowl and whisk until thick. Fold in flour mixture gently. Add melted butter and hot water. Blend thoroughly, using spoon. Divide mixture into muffin tins. Bake 8 to 10 minutes.

To make filling: While whipping the cream with an electric mixer set on medium-high speed, gradually add sugar and vanilla extract. Beat until the texture of shaving cream. If desired, divide mixture and stir in food coloring.

To assemble cakes: With a sharp, pointed knife, cut away risen area from the top of each cake and set aside (do not discard). Fill hole with a dollop of whipped cream. Cut the reserved top sections in half to form "wings." Place wings on top of cream and you have fairy cakes. Makes 24 cakes.

NOTE: Instead of dyeing the filling pink and green, it would also be pretty to leave it natural and dust with gold sprinkles or colored sugar crystals.

ICE CREAM CONE CUPCAKES

18 1/4 oz. Chocolate cake mix
1 1/4 c. Water
1/2 c. Oil
3 Eggs
30 Small (flat bottom) cones

ICING

5 c. Sifted powdered sugar
3/4 c. Shortening
1/2 c. Butter or margarine, soft
2-1/2 tbsp. Milk
1-1/4 tsp. Almond extract
Assorted sprinkles & candies

Preheat oven to 350 F. In large bowl, combine the first 4 ingredients according the directions on the cake mix box. Fill each cone with about 2-1/2 tbsp of batter. Place cones about 3″ apart on an ungreased baking sheet. Bake 25 to 30 minutes. Cool completely. For icing, beat all ingredients together in large bowl until smooth. Ice each cupcake with about 1 tbsp icing. Before icing hardens, decorate with candy and/or sprinkles. Store in airtight container.

Note: Any cake mix will do, but if you want vanilla-tasting cupcakes, use a white or yellow cake mix and replace the almond extract in the icing with vanilla extract.
