Healthy food, and easy to cook.?!


Question: I've decided to start buying my own food as my mum hasnt got time no more to put effort in cooking what with work, which of course i understand.
So my question is whats cheap,healthy and possibly yummy and easy to cook?
Name some things that are out there to buy.
I am really feeling down because of my diet, and its taking its toll on my body. So I think its about time I started taking proper care of myself.

One of my favourite healthy dishes is cous cous salad. Just add some hot stock to cous cous (not sure of the measurements, but you can check on the cous cous packet), and also some raisins, chopped dried apricots, sliced red onion and then leave it to stand for about 5 mins until all the liquid has been soaked up. Then add in whatever veggies you have (i.e. chopped tomato, cucumber, grated carrot and courgette, spring onions...) and also some fresh herbs if you have any (best would be mint or basil I think) and toss it all together. You can have it with some grilled meat, or on its own. You could add a bit of feta cheese if you wanted, and yuo can also top it off with a little salad dressing, and some toasted pine nuts and cumin seeds.

Also, vegetable soups are really easy to make and healthy...basically you'd just fry up an onion and garlic, then add the veg and cook a bit more, add stock and cook until it softens, then blend it.

Also, while you are cooking try to keep all the ingredients as healthy as possible. For example if you are using yogurt, get the Total O% fat yogurt, always use fresh fruit and veg in recipes (unless its like dried fruit, or frozen peas or something) and opt for brown bread, rice, pasta etc.

You can get a million recipes on the internet - I think the best sites are probably the BBC and waitrose websites which have good recipe databases.

Pasta and rice are easy. Eat lots of fresh fruit, veggies, chicken, lean meat and fish.

Turkey and cheddar wrap: cubed turkey breast, shredded low fat cheddar, diced tomato, shredded lettuce, any other sandwich veggie you like, balsamic vinegarette, mix together and wrap in a warm tortilla. I don't know if you can get them where you live but apple chips are a great side to eat with wraps.

Soups are nice and healthy, also easy to make. Just get a lot of root veg and potaoes and boil, add spices and any sort of meat you want and you're done. Also you can make a big batch and freeze it in servings.

salad with bake chicken, or sprimp and patsa

beans and rice. so very simple and good for you. beans are easiest in a crock pot overnight.

I make a big batch and then eat leftovers for days.

i feel your pain hehe, my diet is not very good.
pasta is easy with tuna, tin tomatos etc
jacket potatos are great aswell ,2 hours to cook and have it with ham and salad.

good luck, but remember sweets are good every now and then.

Near East brand makes a really tasty boxed lentil rice pilaf. I like to sautee a little chopped onion first, then add the water, boil, then add the rice and mix. You can have that with a green veggie for a good vegetarian meal, or have it as a side dish.

Fully cooked turkey sausage is good. There are lots of different brands. Slice it up and simmer it in spaghetti sauce with peppers, onions, broccoli. Serve with a bit of pasta (go easy on the pasta).

Veggie burgers are great for a quickie meal too. There are lots of different styles, so if you've had one you don't like, give another one a try.

Healthy Carrot Muffin





3/4 cup all-purpose flour
1/2 cup whole wheat flour
2/3 cup dark brown sugar
2 tablespoons wheat germ
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch fine salt
2 large eggs
1/3 cup vegetable oil
1 tablespoon pure vanilla extract
4 medium carrots, grated (about 2 cups)
1/2 cup canned crushed pineapple, drained
Special equipment: 12 cup muffin tin and paper liners

Preheat the oven to 350 degrees F. Line twelve 1/2-cup muffin cups with paper muffin liners.
Whisk the flours with the brown sugar, wheat germ, cinnamon, baking powder, baking soda, and salt in a medium bowl. In another medium bowl lightly whisk the egg, then whisk in the vegetable oil, and vanilla extract.

Quickly and lightly fold the wet ingredients into the dry ingredients with a rubber spatula. Stir in the carrots and pineapple just until evenly moist; the batter will be very thick. Divide the batter evenly among the muffin cups. Bake until golden and a toothpick inserted in the centers comes out clean, about 30 minutes. Turn muffins out of the tins and cool on a rack. Serve warm.
