The North calls it dumplings, the South calls it Pastry.....?!
Answers: Ok so I just posted a question about chicken pastry only to find out that some call it dumplings. My question is does anyone have a recipe for chicken pastry(or dumplings) that calls for eggs also. I've had it with eggs and it was really good. I need to know how and when you put the eggs in so that I can make it at home. Thanks!
CHICKEN AND DUMPLINGS

1 (3 lb.) stewing chicken
2 tsp. black pepper
2 tsp. salt
1 stick butter
Cut up chicken and boil in a large pot until well done. Remove chicken from broth and let cool. Cut chicken into smaller parts. In the broth add a layer of chicken and a layer of pastry. Dot with butter, sprinkle with salt and pepper. Continue layers until all chicken and pastry has been used. Cover with water added to broth. Simmer slowly uncovered until pastry is well done. Do not stir.
DUMPLINGS:
3 c. flour
2 tbsp. shortening
1/4 c. water
1/4 c. milk
1 c. grated carrots (opt.)
In a bowl, mix flour and shortening with hands, add milk and water as needed to make a stiff dough. Roll thin on a floured board. Cut dumplings in 1" wide strips and 2" long. Add in layers between cooked chicken. Delicious. Cook, uncovered on low heat.
I do not have a recipe for them prepared with egg, but have had chicken & Dumplings my grandfather made often which contained eggs prepared like scrambled in with the gravy/sauce. I regret I do not know how or when they were added, but would assume you would need to scramble them prior to adding to the gravy/sauce to bake.
Sure brings back some great memories, I will have to see if I can find a recipe and will naturally share if I come up with one.

I live in NY and my in laws are from Alabama, I have had many a dumpling, but never with eggs. You might want to check a German recipe? I think it's called spaetzle. I have had this with a meat and gravy.

Southern Chicken and Dumplings
1 whole chicken, cut up
1/2 tablespoon salt
1/4 teaspoon pepper
1 cup milk
Dumplings
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/3 cup vegetable shortening (such as Crisco)
1 egg, beaten
1/2 cup milk
Combine chicken, salt and pepper in a large pot and cover with water. Cook until chicken is tender.
Remove chicken from water. Remove bone and skin. Set chicken aside (while chicken is cooking, prepare dumplings.)
Dumplings: In a large bowl, mix flour, salt and shortening with a fork.
Add 1/2 cup milk; mix to form dough.
Roll dough to 1/4-inch thickness on floured surface. Cut into four-inch strips with sharp knife. Drop dumplings into simmering chicken broth.
Simmer until dumplings are done. Add chicken to dumplings and 1 cup milk.
Cook slowly for 10 minutes.
I add the egg when i add the milk to the dough and cook them for 15 minutes
