How can I use plum jam in a cake?!


Question: I just made a stack of plum jam yesterday, i was hoping to use it in an actual batter to make it super rich and moist? ANY recipes welcome, and TYVM!!!

Plum Cake
1 yellow cake mix
1 C. sour cream
1 1/4 C. plum Jam
1/4 C. veggie oil
1/4 C. sugar
4 large eggs

Directions
Preheat oven to 350°
Spray bundt or 9"x13" pan with cooking spray.
Place all ingredients in large mixing bowl.
Blend on low speed until moistened well then beat on medium speed for 3 minutes.
Pour batter into pan and smooth top.
Bake 40-45 minutes or until top springs back when lightly touched.

My first thought was as a filling for a sponge cake.

Next came muffins.

Spice up some and use as a ham or turkey glaze (Christmas)

Pikelets and cream.

Just swirl some into a plain vanilla cake and bake.
Should be pretty tasty.

I have never used jam IN the batter, but I do use it as a filling between cake layers. Sometimes I frost it, and sometimes I don't, but however I make it, the kids love it. I do have a suggestion, though. You could try "marbling" the cake with a little jam. Just drop a few teaspoons of jam into the batter AFTER you put it in the cakepan and use a knife to swirl it.

This isn't cake, but I just used some jam in a lemon bar recipe and it was delicious--all that you do differently is to add a layer of jam onto the "crust" before adding the lemon topping. It really gives a richer flavor to the lemon bars and cuts down on some of the tartness.
