ADOBONG MANOK
1 Kilo Whole chicken (cut into parts) or choice
cuts of breasts, thighs or wings.
1 cup white vinegar
1 head garlic (firmly chopped) portioned into two
3 pcs. laurel (bay leaves)
1 cup water
1 teaspoon peppercorn
3 tablespoons oil
In a deep skillet, brown chicken in oil.
Add vinegar, soy sauce, first portion of garlic,laurel, peppercorn and water.
Bring to a boil, lower the fire and cook uncovered for 10 minutes.
When it gets too dry just add 1/2 cup of water.
Cover and let simmer until chicken becomes tender.
In a deep pan, cook remaining garlic until it becomes soft golden-brown.
Add the chicken and cook until lightly crispy and pour the rest of the adobo sauce.
Serve hot.
leftover chicken or turkey, cream of chicken soup. egg noodles. forzen peas optional
boil; noodles, heat soup and add turkey/chicken, combine with cooked noodles, you can add frozen (must be frozen) peas into the soup while heating for extra flavor.
My mom makes a great pasta salad.
You need:
*Pasta - (My mom usually uses Rigatoni)
*Mayo - (To taste - I don't know how much my mom uses)
*Olives - (Also to taste)
*Chick Peas/Garbanzo Beans (They are the same)
*Kidney Beans
*A bit of extra virgin olive oil.
*Seasoning to taste.
That's pretty much it.
Sometimes my mom adds chops tomatoes or shredded carrots.

Broccoli salad
1/2 c mayonaise, 1&1/2 tblsp wine vinegar,1/4 c sugar ,1 head broccoli,cut into small pieces,1/2 med onion,1/2 c raisins,1/2lb bacon fully cooked and crumbled.
Mix this all together . It will get better as it sits in the refrigerator . good luck and god bless .
Cheese Scones
2 cups sifted all-purpose flour (256gm)
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt (3ml)
1/4 cup margarine or butter
1 cup milk
2/3 cup grated cheddar cheese
1/4-1/2 teaspoon dried oregano
1. Sift the flour, sugar, baking powder, baking soda and salt together. Add grated cheese and dried oregano and mix.
2. Cut in the margarine or butter till mixture resembles fine breadcrumbs.
3. Add the milk and mix to make a smooth dough. (add more milk if necessary to ensure mix is not too dry) Knead very lightly for ten seconds on a lightly floured surface.
4. Roll or pat to about 3/4" thick (2 cm) and cut into individual scones.
5. Top each scone with a little additional cheese and bake for approximately 12 minutes. Brush the tops with melted butter after removing from the oven.

Scottish Scones
1 1/2 cups all-purpose flour
2 cups rolled oats
1/4 cup white sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup currants
1 egg, beaten
1/2 cup unsalted butter or margarine, melted
1/3 cup milk
1. Combine flour, oats, sugar, baking powder, salt, and currants in a large bowl.
2. Mix well.
3. Make a well in center.
4. Beat egg until frothy, and mix in melted butter or margarine and milk.
5. Pour into well.
6. Stir to make soft dough.
7. Pat dough into two 6- to 7-inch circles.
8. Transfer to greased baking sheet.
9. Score each top into 8 pie-shaped wedges.
10. Bake at 425 degrees F (220 degrees C) for 15 minutes, until risen and browned.
11. Serve warm with butter and jam.

Easy Cucumber Salad
1/2 English cucumber, sliced and quartered
1/4-1/2 cup ranch dressing
1-2 green onion, sliced diagonally
salt and pepper
1. Slice cuke into bite sized chunks, I like to slice lenthwise into quarters then slice it up.
2. Season with salt and pepper to taste.
3. Stir in green onions and ranch dressing.
4. Serve chilled!

Winter Vegetable Au Gratin
2 tablespoons butter
1 onion, chopped
2 garlic cloves, chopped
4 cups of winter vegetables (carrots, turnip, celery, parsnip, sweet potato)
1 teaspoon fennel seeds
2 cups old cheddar cheese
2 tablespoons butter
2 slices whole wheat bread, diced
3 tablespoons chopped parsley
salt & pepper
1. melt butter.
2. Cook all vegetables 3-5 minute.
3. Add Salt and pepper and transfer to ovenproof bowl.
4. Combine cheese, butter, crumbs and parsley.
5. Top vegetables evenly with cheese mixture.
6. Bake 15 minutes or until vegetables are tender and topping is golden.
7. This dish can be prepared ahead of time and reheated just before serving.

Chicken Florentine
2 (10 ounce) packages spinach (thawed, squeezed drained)
4 chicken breasts (cut bite size)
20 ounces cream of mushroom soup
1/2 cup mayonnaise
1 tablespoon curry powder
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
1 tablespoon butter
1/4 cup dry breadcrumbs
2 tablespoons parmesan cheese
1. Grease a 2 quart casserole.
2. Add chicken, then spinach.
3. Mix soup with mayo and spices, pour over spinach/chicken.
4. Melt butter in fry pan, add crumbs and cheese.
5. Spread over all.
6. Bake uncovered at 350 45 min to 1 hour.

Sassy's Summer Berry Crisp
2 apples, peeled and sliced
2 cups cherries, pitted and cut in half
2 cups strawberries, sliced
1 cup sugar
2 tablespoons flour
2 teaspoons cinnamon
2 cups quick-cooking rolled oats
1 cup firmly packed brown sugar
2/3 cup flour
1/2 butter or margarine
whipped cream or ice cream
1. Heat oven to 375 degrees F.
2. Grease a large baking dish (2 quart).
3. In large bowl combine apples,cherries,strawberries sugar, 2 TBS of the flour and cinnamon.
4. Spoon into prepared baking dish.
5. In a small bowl, combine rolled oats, brown sugar and 2/3 Cup of Flour.
6. Cut in Butter or Margarine with pastry blender of fork until consistency of coarse meal.
7. Sprinkle crumb mixture evenly oveer fruit.
8. Bake at 375 degrees F for 30 to 40 minutes until golden brown and apples are tender.
9. Serve with Whipped Cream or Ice Cream.
