We add crumbled bacon(not bacon bits) to the mixture, and use BBQ sauce instead of ketchup. We also use a box of stuffing mix instead of crackers and then we tend to throw in whatever we have....

and a little beer (helps keep it moist and not dry)

Apricot Meat Loaf

1 teaspoon Vegetable oil
1 small Onion, chopped
? teaspoon Ground cumin AND coriander
? teaspoon Cinnamon
? teaspoon Salt and pepper (each)
1 each Egg
1 teaspoon Grated orange rind
? cup Orange juice
? cup Fresh bread crumbs
2 tablespoon Diced dried apricots
1 pounds Lean ground beef
1 tablespoon Slivered almonds

Saute the onions until softened. Set aside. Mix together the egg, orange rind and juice. Add the cooled onions and spices. Stir in the meat, bread crumbs and apricots. Mix together until blended and shape into a loaf form in shallow pan. (or use loaf pans) Sprinkle almonds on top and bake in a 350F oven for about 60-75 minutes or until no longer pink inside.

You can also make individual meat loaves... theset ake longer to cook and are really fun to eat. Just shape the meat into smaller loaves, or, if you want to get fancy, use mini Bundt pans. Cute!

Mashed potatoes are a classic to go with meat loaf, but if you want to mix things up a bit, try risotto! Risotto is a rice dish made with broth, a few veggies for flavor, and cheese!

You could add some ground sage sausage to the ground beef. Maybe make it with 25% sausage and 75% ground sirloin. Mushroom gravy would be good with it also.

i like this version with a baked potato....it reminds me of a steak dinner......it is my husbands favorite


A1 meatloaf

1 1/2 pounds lean ground beef
1/2 cup crushed buttery round crackers
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.
Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, 45 to 60 minutes.

You can add bulk italian sausage to the ground beef. Add finely chopped red bell pepper, finely chopped onion, fresh parsley, about 1/2 cup or more of good quality grated parmesan cheese. I also sometimes add a box of frozen, chopped spinach. Thaw it in the microwve and squeeze it very dry before adding it. Add an extra egg of you use spinach.

I usually do a 3:1 ratio of beef to sausage.

Bread crumbs, egg, chopped onions, 25% ground pork the rest ground beef, pepper, season salt. Combine as usual and mix add a little ketchup to the meat...
Boil 3 eggs, and buy a piece of kolbassa...
When you form the meat loaf put the peeled cooked eggs in the centre along with the chopped kolbassa...
Cook as usual when 1/2 done (drain off grease) cover with a good spagetti sauce and finish cooking it makes a great gravy for your mashed potatos ...

this is how i always make it:

1 cup milk, heated
1 egg
1/2 teaspoon sage
1lb ground beef
1/2 lb ground pork
1/2 lb ground veal
2 tbs ketchup
1 package onion soup mix
1 teaspoon worcestershire sauce
1 cup seasoned bread crumbs.

just mix all the ingredients together and bake at 350 degrees for 1 hour. it's delicious.

I like to use ground turkey instead of beef. add some chopped green pepper, chopped onion, bread crumbs, egg, seasonings. I have to have mashed potatoes and corn with my meatloaf!
my step mom makes this AWESOME meatloaf- make your regular meatloaf in rectangular cake pan (make enough to fill bottom of pan about 2 inches worth, or just use smaller pan) bake till done, top with thin layer of tomato paste, layer of cooked mashed potatoes, and some American cheese slices on top, put back in oven until cheese is melty!!! it's so good, she has to make it for every family occasion. serve with veggies and bread.

Here's one I modified from Alton Brown. It's easier than it looks. For a change, I also make this with Indian (curry) or Asian flavors.

Turkey Loaf
Makes 8 servings

INGREDIENTS

For the MEATLOAF
6 ounces seasoned croutons
1 tsp black pepper, ground
? tsp cayenne
1 Tbs chili powder
1 tsp thyme, ground
2 tsp oregano, ground
? red onion, coursely chopped
1 carrot, coursely chopped
5 garlic cloves, coursely chopped,
? red bell pepper, coursely chopped
2? pounds ground turkey thigh (i.e., dark meat)
1 tsp kosher salt
1 whole egg

For the MUSHROOMS (optional)
Adds flavor and texture to the final loaf. Use it if you have the time and inclination.
2 Tbs olive oil
1 Tbs sweet butter
1 Tbs minced garlic
? tsp red pepper flakes
1 pound champignons, sliced
? cup dry Marsala or Sherry

For the GLAZE
? cup catsup
1 tablespoon cumin, toasted and ground
dash Worcestershire sauce
dash hot pepper sauce
1 tablespoon honey

PROCEDURES
Unwrap turkey and allow to warm toward room temperature.

MUSHROOMS (If using)
Heat a medium saucepan or skillet to medium hot and add 2 Tbs olive oil. When oil is hot, melt the butter in it. When the butter stops foaming, add the garlic and pepper flakes and cook briefly with stirring, long enough to flavor the oil but not brown the garlic, about 20 - 30 seconds. Add in mushrooms and stir around to coat with oil. Add a generous pinch of salt and a few grinds of black pepper and cook, stirring regularly until the pan appears almost dry. Add the wine and cook with stirring until it is mostly evaporated. Remove the contents of the pan into a bowl and set aside.

MEATLOAF

Preheat oven to 325deg.

In the bowl of a food processor, combine croutons, black pepper, cayenne, chili powder, thyme and oregano. Pulse until mixture has a fine texture. Remove into a large mixing bowl. Place the onion, carrot, garlic, and bell pepper into the processor bowl. Pulse until finely chopped but not pureed. Remove this into the large bowl with the crouton/spice mix.

Crumble the turkey into the large bowl and combine it with the crouton/spice mix and chopped vegetables.

Coursely chop the sautéed mushroom and add them to the turkey mixture.

Salt the mixture, add the egg, and combine everything thoroughly. Try not to compress the mixture too much.

Place the seasoned turkey into a 6”x10” loaf pan, pressing it in gently. Place a piece of parchment on a rimmed cookie sheet and invert the meatloaf pan onto the parchment so the turkey loaf comes out of the pan. Place the loaf in the oven.

While the loaf begins to cook, make the glaze. Place the catsup, ground cumin, Worcestershire sauce, hot pepper sauce, and honey into a small saucepan and heat gently, stirring with a small whisk. It should remain thick; it's heated only to facilitate blending it thoroughly.

When the glaze is ready, and after the loaf has cooked for about 20 minutes, remove it from the oven briefly and paint top and sides completely with the glaze. Before returning the loaf to the oven, insert a remote reading thermometer into its center. Place it back in the oven. It will be done when the internal temperature reaches 170deg (takes roughly 90 minutes if the turkey is at room temperature).

It's winter. Serve with something easy, like steamed Brussels sprouts or broccoli, or roasted potatoes.

Use any recipe but add A1 steak sauce, mustard, ketchup, Worchestershire , and Tabasco or hot sauce. All of the liquid ingredantes should be added "to taste". I usually make 2 meatloafs at the same time and vary the amount on above items to compare the different tastes later. The second meatloaf is usually used the next day for sandwiches or on a plate with a couple slices of bread, all covered with a gravy. GREAT COMFORT FOOD...BON APPITITE

Meatloaf is one of my favorite recipes that has been passed down - served with mashed potatoes and whole green beans or steamed baby carrots.

3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

INGREDIENTS
1 egg
3/4 cup milk
1 cup (4 ounces) shredded cheddar cheese
1/2 cup quick-cooking oats
1/2 cup chopped onion
1 teaspoon salt
1 pound lean ground beef
2/3 cup ketchup
1/2 cup packed brown sugar
1-1/2 teaspoons prepared mustard

SERVINGS 8

DIRECTIONS
In a bowl, beat the egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into eight loaves; place in a greased 13-in. x 9-in. x 2-in. baking dish. Combine ketchup, brown sugar and mustard; spoon over loaves.

Bake, uncovered, at 350° for 45 minutes or until the meat is no longer pink and a meat thermometer reads 160°.

As I don't know what your recipe is, I can't say that mine will be different, but here goes. I never use sausage mince in mine I detest that, but just plain minced(ground) beef, breadcrumbs, mixed herbs. I pack it into a greased loaf tin then put a mixture of tomato sauce(ketchup) & BBQ sauce on top. You use your own judgement as to amounts.I bake till nicely browned on top. Another way is to partly cook a whole carrot & a whole zuchini(courgette), put half the meat mix in the loaf pan, lay the whole carrot & zuchini lengthwise on mix then put the other half on top packed in tightly around the vegies.Bake for required time. When sliced you get a slice of carrot & zuchini in each serving. It looks attractive as well as tasting good. I guess you could use your own preferred vegies.Serve with mashed potato & gravy.

Best Meatloaf EVER, make enough because everyone wants some of this

Hamburger 5 lbs.
2 envelopes of generic Lipton Onion SOup mix
A Couple tubes of generic Ritz crackers
1 egg per every pound of crackers
About 1/2 of a white onion diced up
Squirt in some yellow mustard
Squirt in some catsup
Several big dashes of Worchestershire Sauce
A good size helping of Mrs. Dash's original recipe
Mix it all up, add about 1/2 cup WHISKEY and mix again.

When you put it in the pan make sure you have plenty extra room as the whiskey causes the fat to all cook out and that is how it gets so lean while using cheap hamburger.

You can put topping on the meatloaf after it is done, and then put back into oven for 15 minutes uncovered to brown.

Brown sugar, catsup, and whiskey

Mix it until the right feel to it and spread or pour it on top. This becomes like a carmelized bbq sauce.

COOK COVERED UNTIL DONE.
I would say about 350 degrees for about 1 hour and 15 minutes, if the 5 lb. loaf was divided in the pan into 2 loaves.
Best pan to use is a big covered roasting pan.

My father in Law uses 50% ground beef and 50% pork sausage. This makes a different but very good meat loaf. Also some people like a mexican flavor or Italian flavor. I get a seasoning packet that comes complete from a spice company in Illinios. www.excaliburseasoning.com
It is very good and you don't have to add anything other then their seasoning. If you don't have time to buy the seasoning do the Sausage thing above with your normal receipe.

Add frozen vegetables to your meatloaf recipe.

Meat Loaf with Mixed Vegetables
INGREDIENTS:
3/4 cup evaporated milk
2 cups soft bread cubes
1/4 cup chopped onion
2 pounds lean ground beef
1 1/2 teaspoon salt
2 eggs, beaten
1 teaspoon dry mustard
1 1/2 cups frozen mixed vegetables (10 ounce package), thawed
DIRECTIONS:
Pour milk over bread cubes and let stand until milk is absorbed. Stir in onion, ground beef, salt, eggs, and dry mustard; blend well. Stir in vegetables. Mix and shape into a loaf. Bake in loaf pan at 350° for 1 1/2 hours. Cool for 5 minutes before turning out of pan.
