Super Nachos

2 bags corn tortilla chips in 2 colors or different flavors, such as blue corn, red corn, yellow corn, lime flavored, chili flavored or black bean chips -- pick 2 favorites
Pico de Gallo Salsa:
4 vine ripe tomatoes, seeded and chopped
1 jalapeno pepper, seeded and finely chopped, for medium to hot heat level
1 small white onion, chopped
1/4 cup, 2 handfuls, cilantro leaves, finely chopped -- substitute parsley if cilantro is not to your liking
Salt
Beef and Beans Topping:
1 tablespoon extra-virgin olive oil
1 pound ground sirloin
2 cloves garlic, chopped
1 small onion, chopped
1 jalapeno pepper, seeded and chopped
1 teaspoon salt
1 1/2 teaspoons dark chili powder
1 1/2 ground cumin, half a palmful
2 teaspoons to 1 tablespoon cayenne pepper sauce, giving you medium to hot heat level
1 can black beans, 15 ounces, drained
Cheese Sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
3/4 pound pepper jack cheese, shredded, about 2 1/2 cups
Additional toppings to choose from, optional:
Sour cream
Chopped scallions
Chopped black olives
Diced pimento
Sliced avocado, dressed with lemon juice
Hot pepper sauces
Arrange a mixture of 2 varieties of corn chips on a very large platter or use your broiler pan as a platter.
Combine salsa ingredients in a bowl and set aside for flavors to marry.
Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion and peppers to the pan and saute 2 minutes, then add meat and crumble with wooden spoon. Season meat with salt, chili powder, cumin and cayenne pepper sauce. Cook meat 5 minutes, then stir in beans and reduce heat to low.
In a medium sauce pot, melt butter and add flour to it. Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Remove cheese sauce from the heat.
Pour cheese sauce evenly over the massive spread of chips and top evenly with beef and beans and the pico de gallo. UBER NACHOS! Serve immediately as is or, garnish with your choice of extra toppings from the toppings list.

just buy regular tortilla chips and then grind some cheese on them on a plate (recomends white cheese) and them warm them up in a microwave till the cheese melts. and then u have nachos

Get some chips, and get chili no beans, add some cheese, your green onions, you can add salsa, jalapenos, olives, guacamole. Lettuce..
those ingredients are how I make my nachos without the dorittos....I use regular tortilla chips...
I use beans though only to spread on my chips....but since you do not want beans....here is how I make mine.....I spread my chips on a large platter. I take a lb of ground beef and brown it and then I add a packet of the taco seasoning mix. I do not drain the grease and do not add water to the seasoning mix unless I have to and then it is very little. Once the meat is good and coated with the mix, I spoon it over my chips. I sprinkle the meat with taco shredded cheese or mexican blend shredded cheese, then add salsa and nacho cheese over that. I then add a layer of guacamole and then cover with sour cream. I then add shredded lettuce, chopped green onions, sliced black olives, chopped tomatoes, and jalapeno slices

2 cups shredded Colby-Monterey Jack cheese (12 ounces)
Preparation:
1. Heat oven to 450 degrees. Line jelly roll pan, 15 1/2x 10 1/2x1 inch, with aluminum foil. Mix chicken and barbecue sauce. 2. Layer half each of tortilla chips, chili beans, chicken mixture, olives, tomatoes and cheese on pan; repeat. 3. Bake 6 to 8 minutes or until cheese is melted.

Personally, I think your Nacho dish will taste better (and serve more folks) if you use plain Nachos (like tostitos)...and real cheddar cheese.
In a double boiler, melt your cheese and add your fresh chopped veggies (your onions, tomato, olives, jalapeno). If you intend to use lean ground beef, fry it separately with olive oil, salt, red chillis and cumin.
On a serving dish, top Nachos with cheese dip and let folks sprinkle ground beef and sour cream on their individual servings.
The recipe is simple, but it will taste gourmet because of the natural ingredients.
Uh, oh! I see you're hip to the Spicy Nacho Doritos! They're the best! I do have a recipe for you, but I'll have to give it to you via e-mail! I'm at the library and the recipe is at home! I have to give it to you tomorrow! It's really good, trust me!
This one is a favorite at all of our football get-togethers. Best of all it is easy to make and you probably will not have any left-overs (so make plenty if you are having a big crowd).
Beef Tamale Nachos
Serves: 4-6
Prep Time: 5 mins
Total Time: 20 mins
6 El Monterey Beef Tamales (or any brand Tamales)
1 lb. Pasteurized processed cheese (Velveta)
(1) 10 oz. can diced tomatoes and chilies (Rotel)
1 lb. Nacho corn chips (your favorite)
1 cup diced fresh tomato
1 cup diced fresh green onions
1 cup sliced black olives
1/4 cup chopped fresh cilantro
Heat up tamales according to instructions on package, remove tamales from package after hot and slice each tamale into 4 slices, keep warm and set aside for assembly.
Combine cheese and canned tomatoes and chilies in a microwave proof bowl and heat for 9 minutes or until cheese is melted and mix up well; keep warm and set aside for assembly.
Assembly:
On a large platter spread out a single layer of corn chips, pour 1/3 of the cheese sauce over chips, evenly distribute 2 sliced tamales over chips and cheese, along with a third of the tomatoes, green onions, and olives.
Repeat layering process for two more layers and finish nachos in a 375oF oven for 2 minutes or just enough to heat up cheese and tamales, careful not to toast the nacho chips too much. Serve hot and immediately.
